Standing in this field, it’s very hard to forget those that have laid their life down defending our freedom! This weekend marks the end of WWI, a war that forever changed our world. I took this in Castroville TX shortly before what would be my last cycling race as that is where my seizures began. I get almost whole again and that was a major setback. My migraines are still prevalent but I have been seizure free over four years now. Warrior Chef was created out of this pain that I’ve endured through my Army career. I hope that we can help you overcome adversity as well.

I feel like picahna tonight like picahna tonight! Picahna is a super fast meal and we serve it on corn tortillas w/ @caciqueinc queso fresco and chimichurri. The former is optional but the latter is a must! It’s a super fast meal and even little chef who doesn’t eat meat loves this stuff! Salt is the only spice you need! Salt liberally on all sides and Slice against the grain on the flesh side about 1/4 way through. Cook on a smoking hot grill flipping often so the fat doesn’t scorch about 6 mins. Let rest a few minutes and slice through , salting the parts that didn’t get salt and cook it until your preferred doneness.

“Is that good enough?” is the most common question I get with regard to tool calibration. While some tools simply work better when tuned with dial indicators and feeler gauges, most work just fine with a simpler approach. I usually reply to these folks with, “Do you see the error in your work?” If not, then you’re probably good enough. Today I was setting up to cut mortises for slats. My test boards were just acting weird and inconsistent and I knew something was up. 10 years ago I would have pushed through and assumed it would all work out with clamping pressure. Today, I had a feeling my parts were not cut perfectly square. Not the ends of the board, I’m talking about the long edges. Turns out the tablesaw was just slightly off from 90 and all of my slats and rails for the bunk bed were consequently slightly off. A quick adjustment and a quick rip and the pieces were all coming together as they should. How many thousandths off from 90 is my blade now?! 🤷🏿♂️ Does it matter? Nope.
