WHOLE30 “GUMBO”. Perfect for a chilly Sunday at home while doing house chores!
Obviously, this gumbo isn’t the *real deal*, I mean, I didn’t use flour and butter to make a roux...BUT growing up in the South and having gumbo all my life I think I did a pretty swell job in recreating my favorite Cajun dish into a whole30 compliant one. And it makes me so happy that so many of you Louisiana natives agree!!! 💃🏻 it’s warm, cozy, hearty and oh-so flavorful!

Sunday Morning Vibes 🤤 ❤️🙌🏻
Prepped a ton of sweet potato “toast” for the week. I’m super into it right now during my whole30 because they are great for running out the door breakfast, post or pre workout meal, and for lunches just top with your favorite chicken, tuna or egg salad!
This morning I did one sweet, one savory:
Sweet is almond butter and strawberries. Savory is sliced avocado, a poached egg, micro greens and some everything but the bagel seasoning. YUM.

What my kitchen actually is like on a weekday lately: me in leggings, sneakers and a hoodie making like 8 recipes at once 🤪 can you tell it was soups this week? haha, but I wouldn’t change it for the world! My biggest fear doing my blog Is that it might make me begin to hate cooking but NOT one bit! I love it more than ever.
When I’m asked why I love doing what I do a million reasons are there but #1? I’ve always loved feeding others and bringing people around the table with good food. To me, food is more than just what fuels your body. Food brings joy in our lives because with food we make friends, we share special moments with our loved ones, and we count our blessings. Sharing my recipes and passion with others makes me happy, which is my WHY. Thank you all for making and sharing my recipes with your friends and family. Because of YOU I am able to grow and share more and I’m so grateful!
Y’all have been slaying 2019 and making soooo many yummy defined dishes! Get ready because starting Monday I’m taking over the @whole30recipes account and I have some seriously delicious NEW recipes within my takeover just for you in mind! In fact, I think there are TEN new ones. And ones that I’m super proud of that I know y’all will freak out over. Can’t wait to share!!!!!! #

My Dallas Cowboys play tomorrow night and I’m sitting here pondering which baked wing recipe I should make 🧐 and I’m pretty certain these easy and fabulous KUNG PAO-INSPIRED WINGS will make another appearance! Whole30 and paleo approved, these little crispy bites of heaven will be gone in minutes, so go ahead and triple the recipe 😅

EGG in hole Acorn Squash Style!
I recently saw one of my fave blogger friends @ambitiouskitchen make an egg in an acorn squash and had to try it out for myself. UM YUM. This should definitely be on your weekend menu.
Here is how I make it:
Preheat oven to 375.
Place squash horizontally on a cutting board and trim ends off the squash by cutting just enough of the pointy tip to crest a flat bottom (taking care not to cut as far to get into the hollow part of the squash). Now cut the squash in half, crosswise and scoop out the seeds and stringy bits inside (using an ice cream scoop makes this super easy). Place squash cut side use and brush the flesh all over with a little olive oil and sprinkle with a little kosher salt.
Place in the oven and bake until squash js fork tender, 35-45 mins depending on how big your squash is.
Remove from oven and crack an egg into the center of the squash. Place back into the oven and bake until egg whites have set but yolk is still runny, approx 8 minutes.
I topped mine with crumbled bacon bits and a little Valentina hot sauce 🙌🏻
Sweet, savory, and satisfying!

My whole30 ode to TOM YUM SOUP!
This soup is so absolutely delicious. It’s certainly not authentic but i think it’s a lovely whole30 rendition using only simple, wholesome ingredients that I think you’ll be able to easily find at your local grocery store! I absolutely love its hot and sour flavors! So comforting and tasty!

This Super easy Salmon and dill salad has been one of my new go-to lunches lately! Simple, flavorful and honestly? Good for breakfast or dinner too when you don’t feel like cooking!

Post Workout Breakfast with all of the goodies I prepped this week!
-2 egg cups (I have a recipe on my blog)
-1 pork and sage breakfast meatball (also on blog)
-sweet potato toast with almond butter and strawberries. (I prepped these by slicing into 1/2 inch thick slices, spraying with avocado oil and a sprinkle of salt and roasting at 400 until pierces easily w a fork, about 20 mins. I reheat them by popping them in my toaster!) #
This might look like a lot of food to some of you but for post workout (for me) this was just perfect. I am full enough to where I don’t need to snack after and feel great! I don’t eat PRE workout bc I get nauseous. Just a big cup of coffee does it for me 🤷🏻♀️ but to each their own.
It’s day 8 of my whole30 and I’m feeling really good this time! How about y’all that are doing a whole30? What obstacles are you trying to deal with and perhaps I can offer you some free advice or someone else in the community can help respond to your comment below with theirs, too! It’s a group effort,y’all! 😉
