Welp, I’m officially 31 💃🏻
Year 30 might be hard to top, But I say that every year 😂 I feel so blessed. I’ve got a great husband who I have so much fun with and who loves me despite my flaws, 2 beautiful daughters who I learn so much from every day that my heart almost hurts with how much I love them, a family that I wouldn’t trade for the world, friends all across the US that always have my back, a job that I freaking love, and a community of people who surround me with so much positivity and support. I’m a lucky gal.
I look forward to the many wonderful and not-so-fun learning experiences that 31 has to offer because, hey! It’s life, huh? Im just happy I was born and thankful for all that I have and all that I have to give. ✨

Meal prepping today? You do not want to miss these Apple Cider Vinegar Roasted Root Veggies. I’m seriously addicted to them and I’m pretty sure I need to make a batch of these from now until the end of winter! Back home and back on the clean eating track. As soon as I got home my old ways picked right back up and I’m already starting to feel more human 🙌🏻 this morning I had 2 scrambled eggs, a #brathans chicken sausage, an arugula salad with Granny Smith apples, a little olive oil and lemon juice, and some salsa to top off the eggs! Ready for a good Saturday!

As the Holiday Season is coming in full swing, here is a simple yet elegant appetizer to serve your guests: Easy Goat Cheese, Prosciutto and Fig Flatbreads! I've used naan bread as the "flatbread" to make it quick to get on the table, spread with @cypressgrovers goat cheese spread, and topped it with beatiful toppings that not only taste fantastic, but they also seriously impress your guests! Using only 7 ingredients, it's so dang easy to make so that YOU, the host/hostess, can enjoy your guests instead of hustling in the kitchen all day!

Well last night was SO COOL! I was awarded at the @saveurmag 2018 food blogger awards as the readers choice in the category of Most Inspired Weeknight Dinners! A huge, giant thank you to each and everyone of you that nominated me and voted for me. I can’t tell you how grateful I am for your support and love along this journey of mine with my blog. It seriously means so so much to me and I can’t thank you enough!
When I started my blog, I was so insecure that I wouldn’t be good enough, and that I wasn’t a professionally trained chef, and that it would never make it. But here is the wonderful thing about food: it can be interpreted in so many ways and I think it’s really cool that @saveurmag celebrates that behind each chef, homecook, or foodie there is a common ground: our love of food. And it’s all about the love and soul we put behind what we do with that passion and how we share it with others that matters!
Thanks again to YOU for being the best team a girl could ask for. And thanks to @saveurmag and @wearememphistn for putting on an incredible trip that I’ll never forget! I’m taking away an even bigger love of food and community than ever before after visiting Memphis with such inspiring humans. ❤️ heart is so full! Now I can’t wait to be home with my babies to celebrate!

We are leaving Chicago and headed straight for Memphis for the @saveurmag food blogger awards! If you didn’t know, I’m delighted to be a finalist in the ‘most inspired weeknight’ category. The awards are Thursday evening so I’ll keep you posted on if we win or not, but either way I’m just so pumped to be a part of it all! Thank you all for voting and nominating me. Y’all are badass.
In honor, here is one of my personal favorite weeknight meals: my Thai Basil Beef stir fry. Easy to make, packed with so much flavor, and all in one skillet = perfect for any weeknight!
I served mine with cauliflower rice to keep it Whole30 but you could totally serve it over steamed rice if you want! Since I’m out and about at the airport I’ll link the recipe in my stories...or you can just search “Thai basil” on my blog and it will pop right up! 😍

Sometimes a good, and I mean *a really good* burger is just the best treat!! When I mentioned we were visiting Chicago I received so many recommendations to go to @auchevalchicago and you guys, per usual, did NOT disappoint with this rec. freaking good.
Also, on another note, lately people are so shocked when they realize I don’t eat Whole30 24-7 and I’m realizing maybe I’m not sharing enough with you about the times I get out and let loose. So here in this post let me clarify— I eat it all. I don’t have any intolerances, luckily. I do feel my best when eating clean but I have found a balance for myself that just works for me. While I try to eat mostly whole30/paleo- I treat myself often and the biggest rule I have for me: NEVER punish yourself. This means when I live it up and eat and drink all the things I don’t go home and juice cleanse for a week, or only eat 1 meal a days or deprive myself of food. That sets off a vicious cycle of not eating anything then eating everything on the weekends 🙅🏻♀️so what I do is I get home and I eat clean, wholesome, nourishing meals and drink a ton of water. This simple act of kindness to myself goes a long way and I hope I can teach my little girls to do the same. When I feel like my habits are really slipping away from me and I start to lose sight of this mindset is when I reset with a Whole30 challenge. It’s what works for me and I hope you find what works for YOU so that you can be kind to you. You are worth it.
