Recipe for a Saturday treat:
Lemon, cherry, poppyseed protein muffins:
● 125g Casein Complex ● 125g Self Raising Flour
● 120g unsalted butter ● 60g soft dark caster sugar ● Zest of 2 lemons ● 30ml Lemon juice
● 1 large egg
● 1 tsp vanilla essence
● 2 tsp baking powder
● 200g cherries (destoned)
● 120ml buttermilk
● 1 tbsp poppy seeds
1. Preheat Oven to 200C and fill 12-muffin tray with muffin liners or grease muffin tin
2. In a large bowl cream butter, lemon zest, lemon juice sugar until light and fluffy
3. Add the egg and vanilla, beat until combined.
4. In a separate bowl mix dry ingredients
5. Add dry mix and buttermilk to the egg batter alternately folding to combine.
6. Fold in Cherries
7. Divide the batter between the 12 muffin liners and bake for 15-20 mins
8. Allow to cool and serve whilst still warm
