Fry Pan Fritatta πŸ’› . . . A super simple & healthy breakfast! I love making this frittata for a few reasons apart from flavour. 1. You can use up any vege in your fridge 2. I use leftovers for lunches My frypan is extra large so I make a big frittata. You can use up any leftover veges/herbs you have. πŸ‘‡ 12 eggs 1 tblsp olive oil 1 tsp minced garlic 2 cups baby spinach 1/3 cup chopped tomatoes 2 tblsp chopped fresh dill . Whisk the eggs in a large bowl and season. (I also added chilli flakes to my eggs) Heat a large frypan over medium heat. Add the oil & garlic & cook for 30 seconds, add the tomatoes & cook for a further minute. Add the spinach and cook until just wilted. Add the beaten eggs & top with the dill. Wait until the edges start to set then bring them in gently as you would scrambled eggs but do it carefully. When the eggs are halfway cooked transfer to a grill & cook until slightly puffy & cooked through.
