1/2 cup butter, melted
1 cup powdered erythritol (reduce to 3/4 cup is you like less sweet)
2 tsp vanilla extract
3/4 cup almond flour
1/4 cup cocoa powder
1/8 tsp salt
1/4 cup sugar free chocolate chips
1 tbsp butter, melted
1 tbsp peanut butter
1/4 cup brown erythritol (or regular)
1/2 cup almond flour
1/4 tsp baking powder
1/8 tsp baking soda
1/8 tsp salt
1/8 cup sugar free chocolate chips
Preheat oven to 350 and line a 9×9 baking dish with parchment, set aside.
In a large bowl, cream the butter and erythritol. Mix in the eggs and vanilla.
Add the almond flour, cocoa powder, baking powder and salt.
Fold in chocolate chips and scrape batter into prepared 9x9 baking dish.
In a medium bowl mix melted butter, peanut butter, erythritol, and egg until very smooth.
Add almond flour, baking powder, baking soda, and salt. Mix until well combined.. Add chocolate chips and stir until just incorporated.
Scoop spoonfuls of cookie batter directly on the brownie layer. Feel free to swirl the batters together, or just press the cookie layer in gently.
Bake for 20-25 minutes at 350 degrees. A toothpick should come out of the center mostly clean.
Allow brookies to cool completely before digging in!

We made a suuper tasty Keto Cheeseburger Helper using shredded cabbage in place of noodles. Only 3.8g Net Carbs per serving
BEEF AND CABBAGE
1 lb ground beef (80/20)
1 tsp paprika
1/2 tsp onion powder
1/4 tsp garlic powder
salt & pepper to taste
1 tbsp tomato paste
1/4 cup water
2 cups shredded cabbage
2 tbsp salted butter
1 ounce cream cheese, softened
1/2 cup heavy whipping cream
1 1/2 cup shredded cheddar
salt & pepper to taste
Crumbled bacon to top, optional
In a large skillet or dutch oven, over medium heat, brown the ground beef until no pink remains, about 15 minutes. Drain the excess grease and return the skillet of ground beef to the heat.
Add the paprika, onion powder, garlic power and your preferred amount of salt and pepper to the pan. Stir in the tomato paste and water.
Place the shredded cabbage into the skillet and fold into the seasoned ground beef. Bring the mixture to a boil and cover. Allow the cabbage to cook for 15-20 minutes or until tender and translucent, stirring occasionally.
While the cabbage is cooking, prepare the cheese sauce. In a separate saucepan, melt the butter over medium heat, about 45 seconds.
Whisk in the cream cheese and heavy whipping cream until smooth, about 1 minute. The sauce will start to form bubbles, continue whisking and reduce heat to low. Quickly stir in the shredded cheese and sprinkle with salt and pepper.
Turn off the heat and continue stirring until all the cheese is melted and the mixture is completely smooth about, about 1 minute. It will be about the thickness of melted Velveeta or queso.
Once the cabbage is tender, pour the cheese sauce into the skillet and fold into the ground beef mixture. Remove from heat and top with crumbled bacon, if desired.

Enjoying some chicken parmesan casserole for lunch with one of my rolls! Perfect and filling for our cold snowy day 😊
Keto Rolls Recipe
1 Cup blanched finely ground almond Flour
1/4 Cup ground flax seed
1/2 tsp baking soda
pinch of salt, optional
1 Cup shredded mozzaeea
1 oz Cream Cheese
other seasoning, or ebtb to top, optional ♦️Directions
Preheat oven to 400
Line baking sheet with parchment, set aside
In a large bowl mix almond flour, flax, baking powder, salt, and set aside.
In a medium bowl, melt cream cheese and mozzarella together (microwave ~1 min)
Stir cheeses together until smooth, add egg and stir until combined
Mix cheese and egg mixture into dry ingredients and stir until dough forms soft ball (it will be sticky)
Using wet hands, gently roll dough into 6 balls
Place onto lined baking sheet
Bake for 10-12 minutes until golden brown
Let cool for 15 minutes before serving.

I literally just had THE BEST keto drop biscuit ever. Recipe from the book Southern Keto by Natasha Newton. Joe made these for breakfast and I'm blown away. They're light and moist plus they taste like a regular buttermilk type biscuit. I plan on making some sausage gravy and having a scrambled egg bowl with biscuit pieces tomorrow 😍😍 He also made the chocolate pecan pie from Southern Keto and I'll post that later 😁 p.s I cant post the recipes for either of these because they're in a book but you can find it at b&n, Amazon, etc 😊
