Chicken & Carrots with Asparagus 🍲 Went by my parents house the other night and Mom was so sweet to do an entire roast with no salt so that I could enjoy it too! Cooked this up to use some of the leftover roasted chicken and carrots.
CHICKEN & CARROTS 🍗🥕
1-½ c. Roasted Chicken (approx.), cubed
½ c. Roasted Carrots, cubed
1 Tbsp. Minced Garlic
¼ Small Yellow Onion
Simply Organic Garlic & Herb
In a medium heat skillet, add avocado oil. Sauté onions until translucent, then add garlic. Add cubed chunks of chicken, season with Garlic & Herb. Add carrot chunks. Bring everything to temperature then add a squeeze of yellow mustard (to your liking). Stir then remove from heat. Enjoy!
Served with some steamed asparagus. (In a container with water, microwave asparagus on high for 7 min. or 5 min. if you want them crunchier.)
Since the chicken and carrots were already cooked, this was just to heat it all up. This recipe can be made with raw chicken and carrots, just adjust cooking times. A simple dinner but so delicious and completely @21daymealplan compliant!
