As midterm season comes in full force here at UMD, I want as many meals that make me feel good as possible. This meal could be a great dinner or lunch. With some quinoa, chickpeas, sweet potatoes, sautéed kale & @gardein meatless meatballs, this meal keeps me fueled for a while. Happy Tuesday everyone (:

Ice cream cravings are not to be taken lightly.
This one is a throwback picture from my Hungarian holiday. It was raining and freaking cold. But ice-cream is a must, no matter what the weather outside is.

Grown up ‘grandmas’ soup 🥣 for when you’re feeling a little under the weather or just want to get cosy! Served with Gouda sourdough toast 😍
I’ve used lots of leftovers for this soup so recipe is easily adaptable. • Heat some oil in a frying pan and add chopped onion and a clove of garlic and fry until softened. • Add your roasted leftovers to the pan (in this case, butternut squash, carrots and suede) and some fresh herbs (thyme). • Add 500ml chicken stock and shredded leftover chicken and simmer for 10 minutes or until piping hot. • Using a stick blender or food processor, blitz the mixture until smooth. • In the meantime, slice two pieces of sourdough bread and cover in grated Gouda and pop under the grill until melted. • Finally, add a dollop of cream to the soup and mix through.
