I don't cook anymore and just buy cookbooks while complaining about how hot it is out. Or maybe I'm stocking up for when it gets cooler? Whatever, glad to get this one in my paws: #wickedhealthy cookbook. It was a really big life highlight to go through @rouxbe plant based certification and have @chadsarno give me thoughtful, encouraging feedback. Since then I also have been able to catch @dereksarno feed which is a total stoke fest. The book itself is great in that the size is perfect to lay out on your counter but this is a fantastic one to grab for someone thinking about ditching animal products. Lots of basics but also lots of "hey you can make this amazing looking thing!" Can't wait to delve into it. Thanks for all your passion and work!

Back to work in a minute after a long needed short break and settling down in the U.K more permanently.
We will be hitting the ground running and cooking our plants off with lots of new VEGAN @tescofood and @wickedhealthy options in the works and they’re all coming out real soon. So far 2018 has been a stellar launch year for Wicked vegan choices. In the first 23 weeks we sold more than 3 million units, that’s 3M meals with no animal products!! And what’s really great is seeing the competition we’ve inspired in other retailers since we’ve launched. The more choices made available everywhere that make it easy to eat food free from animals the better!! And....... Just wait until you see what we’ve got coming out next! Let’s just say I’m excited for what’s gonna be in store! 🤩🎄🌱🍄🍰👌.

I’ve spent a whole day eating all the glorious food at the @veganfoodfestivals in Amsterdam so this is a photo from last week. I made the sweet potato gratin from Wicked Healthy which is just really delicious. I love their cheese sauce and in here that’s adapted slightly by adding some rosemary, thyme and smoked paprika. It’s rich in flavour and works really well with the sweet potato and red onions on top. It’s very smoky though. I don’t think you have to add more smoked paprika than is already in the sauce, but it’s delicious either way. This was my second time making this and I still can’t get enough. x Elske .

I’m not a big cauliflower fan but couldn’t say no to this bargain. It was pretty good. 😀 I loved the little nuggets of onion bhaji, which were my favourite part.
I picked out the pickled onion (I abhor pickled things 😢) and added extra spinach.

Saw Mildred daily 🐿 she won’t approach me any longer though = wicked successful release (Bittersweet). Visited with some 🍄 growers. Currently saying long goodbyes to the ole kitchen that served us so well.
Couple more dinners with friends then
headed back to London again. It’s official, London’s the new home and just wait until you see what we’ve been working on 🌱.
Baked lentil falafel with herbed sriracha aioli
I’m usually the only one in our house that likes falafel, but with some visiting friends here that also enjoy it, I decided to make a batch.
This version is inspired by the falafel Chef Eason @chunshinho taught with Chef Joyce @j935091 during the @vegeholic_asia workshop at @tsai_chi_ya in Taichung 🇹🇼and also by the version I learned during a cooking workshop in Abu Dhabi, UAE 🇦🇪.
I made the sriracha aioli with aquafaba, which has become my go-to ingredient for vegan mayo; I used the @wickedhealthy version as a base recipe. Consider giving aquafaba based mayo a try if you haven’t yet—it’s pretty amazing stuff and as good, if not better, than traditional in my opinion. .
For the falafel, just soak your lentils and process in a food processor until a loose paste begins to form. Don’t over process as you want some lentils to remain whole for a more interesting texture. I then added a minced red onion, lots of minced garlic, cilantro, parsley, sesame seeds, lemon zest, a little lemon juice, salt and a very healthy amount of cumin (because I just love its earthy flavor.)
I shaped into quenelles (thanks to Chef Eason for this idea) and brushed with a little olive oil before baking.
