January day 16 - what I ate on a raw till 4 diet and to help peeps doing Veganuary.
Raw cereal with homemade raw almond and cacao milk.
4 avocados 🥑.
1 red pepper.
1 tomato 🍅.
1/4 red onion.
Snack (after 4pm).
2 slices of sourdough toast.
Homemade spag bowl (check my post from the 14th for recipe!), with nutritional yeast and a small serving of the Wicked Healthy brownie from Tesco and some Oatly single cream.
hi I INHALED this last night, I’ll admit I picked the olives off bc I’m a wimp and originally I was going to put some vegan cheese on top but I forgot and it was gorgeous without! I wasn’t sure about the mint salsa verde when I first saw it but it smelled divine and it just works with the pizza like I didn’t think it would? 10/10 thanks reduced section xx #veganuk#veganpizza#ukvegan#wickedhealthy#wickedkitchen#tescovegan#vegantesco#veganuary
Wicked Fiery & Filthy Wedges 😈 Another success from @wickedhealthy and these are 🌶🌶🌶 Swipe for a close up and packaging 📸 There's not too much to say here, beautifully seasoned Wedges with BBQ pulled mushrooms, jalapeños, and two kinds of #vegan cheese 😮 🥔🍄🌶🧀😍 An absolute treat, and another amazing addition to the @tescofood range courtesy of @dereksarno and the rest of the #wickedkitchen team ❤️ Honestly, this was a little on the hot side for me, but I bet it would go beautifully with some cooling Guacamole 🥑 (Check out my previous posts for a great guac recipe!) 🌱

It’s been almost two years since we started this project. Having an idea and bringing it to market is certainly no joke. There have been plenty of road bumps along the way, almost to the point of giving up, but believing in the mission of what @goodcatchfoods represents pushed us all forward without ever looking back. Though the mistakes we made on this journey felt at times like failures, we took them as a challenge, learned from them, and pushed harder to get the results we wanted, and through the countless trials we didn’t give up.
Being on an amazing team, combined with the passion of making a difference, and a reminder by investors of the impact opportunity in front of us, we stayed on track and brought this phenomenal project to production. This week is a milestone for Good Catch, @wickedhealthy and for myself personally. Seeing the product coming off the line over the last couple days was surreal, and I’m beyond excited to think about the positive ripples it will create. The passion to shake shit up, and disrupt animal agriculture on the land and in the oceans keeps our engine going and will always be our driving force.

Going meatless doesn’t mean you have to skip those delicious meaty-fatty umami textures and flavors that our taste buds love.😜 You don’t have to sit around twiddling your thumbs at a bbq. 🤙🏼
The good news is mushrooms have it! No no, forget about the boring puny buttons 🍄, there’s a whole other world of ‘shrooms waiting to be discovered. With weird names like maitake, cremini, oyster...🍴
The funny thing is you cook them eerily similar to meat 🔥🧂- season, marinade, pan-sear, or BBQ grill...
So if you’re doing #veganuary or just looking how to reduce 🥩, check these simple steps out: (took me just a few minutes w kids running about)
Done w maitake, but but oyster, portobellos could work too.👩🏽🍳
- Place a big cluster on a hot oily pan
- Gently smash a heavy pan on top and cook for 2 minutes - Flip the cluster, season the cooked side - Place heavy pan top again, and repeat the previous 2 steps (season, smash, sear) over and over until it looks so good you have to eat it! (About 10 minutes)
- (The pan’s weight helps the liquid leave and eventually creates a meaty texture)
🥘My dish was Italian so I used pesto spices and olive oil to season. But you can use anything, bbq sauce, etc. 🔥Be patient w watery shrooms like oyster, must pan-sear for longer. 🎬( video in my plant-based highlights)

Stuffed avocados from @wickedhealthy cookbook with heirloom tomato salsa, hot chocolate lentils, and underneath all of these goodies there is some wicked healthy cheese sauce. The avos and cheese sauce were baked in the oven, which was new to me and very tasty! Have you ever baked an avocado before?
