This dish is a lot deeper than it looks, but yet, is also lighter than it looks. :) Caramelized Crimini mushrooms, toasted garlic, white wine, parmesan (lots of parmesan), fresh herbs, and finally garnished with toasted, seasoned, panko and parmesan crumbs and fresh basil. #perfectpasta
When you’re busy getting things together for Christmas and you don’t feel like cooking...flatbreads for dinner! Super versatile. The combinations are endless! This is @stonefirenaan flatbread topped with Sicilian pesto, mozzarella, chopped tomatoes, garlic powder and cracked pepper 😬🙌🏽
The lead up to Christmas is always a busy time, but the first half of our week is relatively calm…girls after school activities are on break for the holiday and the Mr. is in town for the balance of the year. But we are SUPER thrilled that this week will get to see some dear friends AND our Moms, do I’ll be doing a bit of energy into the first part of the meals and a bit of prep for the latter part of the week. What’s for Dinner this week??? Sunday: Manicotti (made a month ago, I’d kept extra in the freezer), with roasted brussels sprouts.
Monday: Sauteed chicken, broccoli and Italian sausage over brown rice.
Tuesday: Soft chicken tacos, refried beans, and cucumber and tomato salad...secret to perfect tacos-Trader Joes Chile lime seasoning...soooo good👌🏽 Wednesday: Spaghetti & Trader Joe’s beef meatballs, using @fitblvd’s favorite Rao’s marinara sauce.
Thursday: Aunt Nat’s sticky soy & ginger marinated chicken thighs, steamed rice, roasted string beans and cucumber salad.

Cucumber, feta, pepper, salad. I love when you get the sweet pop from the Peppadew, then the tangy, spicy, pepperoncini. The crispy and cooling cucumber, the smooth, bright, salty feta, and finally the fresh parsley. #perfectbite
Pesto & sun-dried tomato chicken thighs served with a side of green beans & cherry tomatoes. 😋 This is one of those meals that I would never have attempted to make a few years ago. I would have assumed it was too difficult, with too many fancy ingredients, and a super complicated recipe to follow that would require hours in the kitchen. Killing this cold with chicken + veggie soup 🍲🤒.
I hadn’t been sick in almost two years, and of course I had to pick up a virus on the plane back from Toronto🙄. I wasn’t prepared with my @stfrancisherbfarm deep immune.. I wonder if I would have gotten sick if I had been taking it! I’ve been supplementing with oregano oil and echinacea since Friday and I have to admit - the severity of this cold isn’t bad... it’s just taking forever to get over!
So the last two days I’ve worked from home and spent most of my hours on the couch. Tonight I’m going to bed EARLY. I’m nourishing my body with VEGGIES in this homemade veggie soup... lots of ginger tea, too!
Letting my body do its thing. I no longer fight myself when I need something. I simply listen, acknowledge and accept.
Thankful for mindfulness and being in tune with my body✌🏻.
