This trip to the North Woods of Minnesota marks a seismic shift in time for me. ✨ A year ago began my cascade into the sleepless nights I would experience until Leo was eight months old. The multi-hour long nursing sessions became more frequent, and Leo stopped sleeping more than one hour at a time. I remember sitting alone in this cabin loft crying while Leo nursed, feeling that the loneliness and helplessness would consume me. Late at night when it was just he and I awake in the inescapable blackness, I felt uncharacteristically afraid of these woods and its hidden creatures. A year later I find myself spending hours on the lake alone while he naps and enjoying full nights of sleep with cozy, snuggly mornings to look forward to. More than that, Leo is now starting to see the lake the way that we see it: a place of wonder and peace that always makes us feel whole again when we need it. 🌲 #rootandroar
Happy Saturday, Friends! In our house, weekend mornings are for sleeping in, making homemade breakfasts (in our pj's) and meal prepping for the week. Really just winged it on these waffles, but they went over well and the kids loved helping. 😄 Used Whole Wheat flour, and whipped egg whites, so they were fluffy and filling. Topped with ground Flax & Chia Seed Blend in "Vanilla and Maple" Flavor (the 365 brand from @wholefoods), which I LOVE for toppings, smoothies and for adding to baked goods for omega-3 essential fatty acids and extra fiber, plus this taste is delish! We also put a dollop of Greek yogurt, strawberries and chopped pecans on top. Bonus, my "Frozen" obsessed daughter thinks the waffles look like Elsa's snowflakes ❄️, so we got that going for us! 😉 in hindsight I think peaches would have been really yummy. Good thing we have leftovers for tomorrow! The CO peaches are perfect right now.

“OMELETTE DU FROMAGE.”

I made eggs that turned out as an omelette — as opposed to turning out as scrambled eggs. 🥚💛👍🏻
I steamed the spinach first, then I added coconut oil and eggs and (precooked) ham. I cooked it on low for a good while, and covered the pan for a minute or so. This made folding the omelette onto itself pretty dang easy.
Cooked it for another minute or more after folding to ensure the gooey part in the middle got less gooey.
I cute some deliciously sweet grape tomatoes to make flowers (they were very slidey and didn’t sit still). Topped with @traderjoes everything but the bagel seasoning and @sirkensingtons ketchup. •
So. Much. Protein.
I love eggs.
After an AWESOME yoga workout this AM, I was trying to sneak in a quick 10 minute guided meditation when I heard little footsteps running through the house.
Without a word, my little man just climbed into my lap and snuggled with me a bit while we focused on our breaths for a few minutes. Then he moved to the couch and low and behold, I hear little feet again.
Repeat the same process with my big girl as we take deep breaths together and feel the gratitude for all we have been given in our lives.

Weekend! 🏋🏻♀️ Always try to squeeze in at least one workout at the weekend to balance out the food and alcohol.
