🎯I hope you notice the #door; that door can tell tales of sweat, burpees, jumping jacks, heavy breathing, hard pumping heart 💓💓, and whatnots 😅! 🎯The corner around the door is the sacred space where I show up and workout, almost every #weekday I am home.....and I give my best for 30 solid minutes. 🎯I have been doing it #consistently for over 3 years now.....and my body is grateful for it. Who says you can't have cake everyday? This vegan spiced applesauce cake takes 10 mins to prep and put in the oven!
A perfect treat to beat those Monday blues. Here's the recipe (detailed notes and step by step pictures on stories and in highlights). Prep:
1. 1/4th cup canola oil*
2. 1/2 cup brown sugar
3. 1 cup applesauce**
4. 1 tsp vanilla
5. 1 cup flour
6. 1 tsp baking powder
7. 1 tsp cinnamon
8. 1/8 tsp nutmeg (a pinch)
9. 1/4 tsp salt
10. Chopped walnuts (optional)
Preheat the oven @ 190 degree Celsius. In a bowl, mix the dry ingredients: flour, baking powder, cinnamon, nutmeg, salt. Mix together and set aside. In a separate bowl, add the canola oil and brown sugar. Whisk it till the sugar starts to dissolve. Add in the applesauce and vanilla and whisk again till everything is well mixed. Now add in the flour mix and fold in with a spatula.
Do not overmix this, just keep going till you can see no more flour pockets. (Over mixing will lead to a more bread like texture than a cake like texture). Sprinkle some chopped walnuts or any other nuts of your choice on top for a nice crunch. Transfer to a loaf tin greased well with oil and bake at 190 degree celsius for 45 mins to 1 hour till a skewer/knife inserted at the center of the cake comes out clean. After taking out of the oven, let the cake cool in the tin completely before attempting to de-mould it.
* You can substitute canola oil with regular vegetable oil.
**Applesauce is made by boiling apples in water with sugar and cinnamon till they are soft after which they are mashed up. The recipe for applesauce is under the story highlight 'Basic'.
