In my opinion, #ChilesEnNogada is one of the most beautiful dishes. I love the contrast of ruby red pomegranate arils studded against the walnut based cream sauce blanketed over intensely green poblano chiles. While glorious and a special treat to indulge in, they are notoriously painstaking to make and mama ain’t got no time for that. So I did this instead. Sweet potato chips, melted goat cheese, topped with toasted walnut pomegranate salsa. It didn’t suck. Only thing is I would slice the sweet potatoes thinner next time for a more chip like crunch. I may have eaten the whole plate after I made these. I’ll let you come to your own conclusion about that one. 😜
Wannabe Chiles En Nogada Nachos
2 large sweet potatoes sliced thin (I would def use a mandolin if you got one to slice to your desired thinness)
1/3 cup goat cheese crumbled
1/2 cup walnuts toasted in a fleeting pan and chopped.
Arils from one pomegranate (and any juices that collect at the bottoms of the bowl)
1/4 cup red onion diced super small
2 Tbsp. Finley chopped cilantro
1 jalapeño pepper seeded and diced small
1/2 a lime juiced
Ghee or coconut oil
Preheat oven to 425. Place rack on second to lowest rail in the oven. Line sheet pan with foil and grease well with your preferred fat. Scatter the sweet potato slices on the sheet and roast in the oven until browned on both sides. You will have to keep an on them and flip. Pay especially close attention if you sliced them hella thin. Remove from oven to cook. .
Ok first of all, try to chop everything so it’s the same size. This will help balance the flavors. Combine walnuts, pomegranates, onion, cilantro, and jalapeño in a small bowl. Mix up and add the lime and any pomegranate juice collected. Add salt to taste. .
Arrange sweet potatoes on an oven safe platter. Sprinkle goat cheese all over. Broil in oven until melted. Remove from oven and top with salsa. .

I grew up as one of those kids who absolutely LOVED Brussel Sprouts...and I could never figure out why in movies kids noses would always wrinkle into a stink face at their plates when Mom would serve them these little green cabbage-like things...
And when I would tell kids at school that I actually liked Brussel sprouts they would toss me a sideways glance like "...what planet are you from again?" 😂
I also distinctly remember an episode of FRANKLIN (you know, the show about a little turtle 🐢 with this best friends Bear 🐻 and Snail 🐌!) where Franklin actually hid his Brussel sprouts in his favourite blanket, causing it to just reeeeek, ultimately making him fess up to his parents - ANYWAYS - the point IS...I really like Brussel sprouts...
SO! For those of you fellow weirdos out there who actually enjoy eating Brussel Sprouts, here's a meal idea for ya!
M A I N:
• Organic Brussel Sprouts (sautéed in Garlic, organic extra virgin Olive Oil & sprinkle Pink Himalayan Salt)
• Toasted Organic Walnuts
• Organic Garbanzo Beans (added to sauté pan)
E X T R A S:
You'll see that I have paired my go-to spinach, quinoa, kale and yam salad (which you can find in my other posts)
I've also added two small homemade bison burger patties to some extra whole protein! 💪🏻

Oh yes, success. I veganized the @deborahmadison recipe, Not So Sticky Date Pudding and I can’t wait to make it again. It went to a potluck last night and everyone agreed- this is an awesome dessert. Instead of the liquor glaze, I decided to add Silan which is date molasses, to the Vanilla Pastry Cream in my cookbook, Vegan Chocolate. I’ll be posting the recipe on my blog later this month, but in time for Thanksgiving. I have a small tweak I want try. And happily @soomfoods Silan will be ready to order soon on their site and Amazon.

I don’t want to bash other nuts 😅 but walnuts do take the lead 👑 Other nuts are healthy as well and have their own benefits like Brazil nuts are crazy high in selenium. In fact, 1-2 Brazil nuts already cover your entire daily selenium needs. So I recommend eating a handful of nuts every day or 2 tablespoons of nut butter 😋
