This Buffalo Cauliflower Quinoa Burrito was easily the best meal I had during my second trip to Thailand.
I nearly didn't go to this restaurant, because the logo was so clearly themed around seafood, but I noticed a little blackboard outside which proudly stated "We serve: Thai food, Mexican food, Western food, Vegan Food"
It's so reassuring to go somewhere and not have to explain what vegan means. To my pleasant surprise, they didn't just have a few vegan options, they had a full seperate vegan menu. I struggled to decide with so many delicious sounding vegan options. I eventually ordered the Buffalo Cauliflower Quinoa burrito. It was huuuuge! The Spicey Mexican flavours were just right, which is so impressive as Thai cuisine can be very spicy, (which I love) but the kitchen staff at Pailay obviously made a conscious effort to mellow out the spice to stay true to the Mexican theme of the dish. The wedges were chunky and cooked to perfection, the Hummus was beautifully seasoned and also a little Spicey, even the side salad was yummy. Service was friendly and fast. I can say with all honesty, this is the first time we have ever eaten out as a couple in Asia and our food came to the table at the same time! I can't say enough good things about it. If you are travelling as a mixed group with some meat eaters, vegetarians and vegans, then go here, everyone will be well catered for!
~EASE OF VEGAN ORDER~
Pailay serve meat but they have a full seperate vegan menu, which had extensive options and every single one sounded amazing. It took us a long time to order, everything was so tempting.

I’ve been editing all day today and all I kept thinking as I went through the footage was how much I freakin’ LOVE travelling!! I know that sounds silly (being a travel blogger and all!) but sometimes you can become so focused on the runnings of the day to day that you lose sight of what you really love to do - for me in particular it’s the exploration of somewhere I’ve never been before 💁🏼♀️

Oh how much I do love the ability to find balance in life......it’s not all macros & salads & gyms. of course, there’s a nasty twinge of guilt every time I choose to let loose on a trip, but that’s something I work through to make sure I’m enjoying time with my friends & family 💕
2019 is the first year in 5 that I’m not planning to do a show & it feels weird not being in prep mode. Every year before that in until September of last year I’ve traveled while prepping.....and I’m sure it’s been annoying for @pixburgher & my fam jam/friends🤷🏻♀️
Rewiring my brain is honestly really challenging & having true freedom while on vacation feels WEIRD. I didn’t even pack gym clothes this trip🧠 .
Every time we are back we hit up this spot at @mandalaybay for their full Vegan menu 🌱
Last night was meatballs, garlic cheese bread & a supreme Pizza......obviously couldn’t finish😹

Day 12 in Thailand. I did many interesting things that day but honestly nothing beats Monkey Beach. Monkeys everywhere. They are soo adorable. Two young monkeys held my fingers and it was such a fun experience. Their hands are so much like human baby hands.

CHOWDER 🌿 of the red onion, sweetcorn & chilli variety 🌽✨😏🌶 served with a chunk of @scealbakery sourdough, I couldn’t get over how good this tasted when I first made it & have recreated it 3 times in the past couple of weeks! It feels like a big warm hug on a winter evening😸

Da bekommt man doch gleich Vorfreude auf den Frühling 😁 Ich kann’s wirklich kaum abwarten bis sich das Leben endlich wieder mehr draußen abspielt 😃 Ich zieh mir jetzt die Sonnenbrille an, pack die Drohne ein und Düse mit den Knödeln (unsere Doggies😉) aufs Feld! 🐾 Und heute Abend gibt’s Pizzaaa... könnt eigentlich kaum besser laufen, oder?! 😂 Was gönnt ihr euch heute?? My FAVE meal as of late cos it tastes unreal & is full of nutrients too 🌿 I literally CRAVE this most days. A rough recipe:
a load of Irish kale - keep it raw or lightly steam, sautéed leek & mushroom, grilled organic tofu, avocado, tahini dressing & @bravefoods roasted peas which are divine. For the dressing I mix 1.5tbsp each of lemon juice, tahini, tamari and water then add a pinch of dried ginger, chilli & garlic. Over 30g of protein on this plate 🌿💪🏽 #plants#wholefoods#veganiseasy
