HAPPY FRIDAY!! 🎊 I hope you all have a magical day and a great start to your weekends ☺️💖 This is breakfast after my morning workout 💪🏻✨ on the left we have a homemade cacao & coconut spread, topped with a raspberry compote and coconut cream 🤤 and on the right, we have crunchy peanut butter, with sliced banana, sprinkled with plenty of cinnamon! I’ve never thought to put cinnamon on my PB & banana toast, but the combination is just 👌🏻👌🏻 amazing! Which one would you choose? Left 👈🏻 or right 👉🏻?
I’m actually dead this morning. Struggled so much with my workout as I never go this early or without food. This is a HIIT workout where I did 10 mins of 45 seconds on and 15 seconds off on 10mph, then a 2 minute walking cool down.

That time I had a vegan English Breakfast whilst chilling with my bestie @filmoreandunion 😎
Hey kids! My mumma bear had us over for dinner and was a culinary wizard! (Photos don't do It justice - hard to get good ones at a dinner table!) But this was incredible!!! She made loaded potatoes (roasted to perfection) with the best chilli I've ever eaten, slaw, sour cream & cheese. Served with a side of fattoush with a sensational dressing.
Desert was PB flapjacks with oats, seeds, nuts, maple, and coyo vanilla & cinnamon ice cream, with a chocolate drizzle.
How good are mums?! It means a lot when people go that extra mile to respect your decision to choose vegan. Thanks mum!

When @jaxoldreive told me we were having a cabbage soup for dinner, I’m not going to lie, I was totally not keen.
And then I tasted this, and I was SHOCKED.
She totally created the yummiest soup I have ever had, yes, EVER.
It may not sound appealing, nor look it due to my shocking photos, but it is seriously AMAZING! 🥬✨🌿
HEARTY HOP ROASTED CABBAGE SOUP
WHAT YOU NEED:
•6 baby cabbages, halved
•1 large onion, loosely diced
•3 medium carrots, peeled and sliced
•3 stalks of celery, sliced
•3 Roma tomatoes, quartered
•2 tablespoons veg stock
•2 tablespoons onion powder
•1 cup pearl barley
•1 tablespoon garlic, crushed
•1 liter water
WHAT TO DO:
•Preheat oven to 120^C.
•Put a little bit of olive oil in roasting pan and place cabbages flat side down. Slow roast them for 2 hours on 120.
•15 mins before the cabbages are ready, Sauté the onions and garlic in soup pot with a drop of olive oil.
•Once translucent, add the celery and carrots. Fry for another 3 mins.
•Mix the onion powder and veg stock with 500 mls water and add to the pot.
•Stir well and add then another 500ml water along with the pearl barely, tomatoes and roasted cabbages.
•Allow to simmer for an hour so that the soup develops a nice rich flavour.
•You may need to add more water depending on how you like your soup.

So this is a very old coat...in fact I’ve had this coat since I was 15 because it comes with a lifetime guarantee! The reason I’m talking about it isn’t because that’s a pretty good deal to be able to buy one coat that lasts forever, it’s because this coat has feathers in it and I bought it 3 years prior to me going vegan. This picture is the last time I’ve worn the coat because I just feel uncomfortable in it every time I do and find myself trying to justify it in my head. The fact of the matter is, even if me wearing it now isn’t causing more harm, I don’t want to represent an industry that currently still does cause harm! #gofeatherfree this winter ❄️
🍄 Creamy Vegan Mushroom Stroganoff 📷 by @elavegan 🚨🚨Recipe: 1 onion diced
2-3 cloves of garlic, minced
1 tbsp vegetable oil
11 oz mushrooms, sliced (300 g)
4 tbsp white wine (optional)
1 tbsp tamari or soy sauce
3/4 cup vegetable broth or water (180 ml)
3/4 cup plant-based milk or cream (180 ml)
2 tbsp cornstarch
Spice mixture: 1 tsp onion powder, 1/2 tsp garlic powder, 1/2 tsp smoked paprika, a pinch of chili flakes, sea salt & pepper to taste
1 tbsp nutritional yeast flakes (optional)
Fresh thyme leaves and/or parsley (and/or tarragon), chopped
Serve with brown rice or pasta of choice
Heat oil in a large pan/skillet, add onion and fry for about 5 minutes. Add garlic and fry for a further 1 minute.
Now add the mushrooms and fry over medium heat for about 5 mins.
Pour in white wine (optional), vegetable broth, tamari (or soy sauce), and the spice mixture. add nutritional yeast flakes as well but that's optional! Bring to a boil.
Add cornstarch to the plant-based milk or cream (ela used canned coconut milk, however, almond milk, oat milk/cream or soy milk/cream is fine too) and stir to dissolve.
Pour the milk/cream mixture into the pan and cook on low-medium heat for about 10 minutes until the sauce thickens. Taste and adjust seasonings as to your preference.
Add fresh thyme leaves and/or parsley and/or tarragon to taste! Enjoy with brown rice or pasta of choice!
