Vegan Kotecha is back! Sorry I've not posted in a very long while... Been busy with life 😂
One thing that I've started doing to help when I've got no time to cook properly is meal prepping! Basically just bulk make all your meals for the week on a Sunday.
Since its Veganuary I figured I'd post a lunch box meal prep for you guys to give you an idea of what you could make.
This is teriyaki fried tofu, cous cous salad and tabbouleh salad.

✨Slowing down the last few days we have here on Oahu before heading to the next spot! Roughly 9 months ago, I decided to start traveling long term and hold off on settling down in Pennsylvania.

💙 I walked in paradise today....it was right on my doorstep and I felt it in every part of my soul. 🐳 but as I left my footprints behind, my heart saddened at the thought that a future generation may never experience what I did today 😔 🌊The clean sand, blue sky and waves at my feet might be lost forever in a few years from now....the rubbish my mom and I picked up from the beach today is another small reminder of what we are doing to our planet ...our ocean. ⚠️Every decision you make in your life , from the washing powder you use, the clothes you put on your body to food you choose to eat (ESPECIALLY the food you choose to eat) impacts the world around you. .

Mingau de aveia é uma delicinha né?
Estava há um tempo evitando, devido ao glúten, mas encontrei a Farinha de Aveia Sem Glúten @monamaorganicos (não é muito barata, mas é só pra matar a saudade) e por que não fazer um grolado bem gostoso?
Peguei aquelas castanhas preciosas que estavam sobrando e fiz um leite muito do gostosinho. Como elas não estavam demolhadas, mas o desejo era grande, deixei-as de molho em água quente, para que amolecessem rapidamente (uns 30 minutos?). Também em água morna, coloquei pra hidratar chia e ameixa seca, em potes separados.
Peguei uma maçãzinha pra cozinhar e fazer esse mingau delícia acontecer. Maçã cozida e reservada.
Fiz e coei o leite de castanhas.
Para o mingau, usei 1 xícara de leite de castanhas e 3 colheres (sopa) de farinha de aveia, levei ao fogo, mexendo até ficar na consistência ideal, e perto de desligar o fogo, acrescentei canela e gengibre.
Eu não adoço porque não vejo necessidade, mas se você curtir, pode colocar um pouco do caldinho que formou da ameixa hidratando, durante o cozimento, misturando depois, ou por cima do mingau, como uma calda.
Assim, monto o prato com mingau, por cima chia e ameixa hidratadas e maçã cozida.
IMPORTANTE: Apesar de eu amar aveia, acho que demoro para digerir (aumenta kapha), então consumi-la quentinha (diminui kapha), já dá uma amenizada, mas não muito, então aproveito e coloco canela e gengibre pra ativar ainda mais a digestão e o sabor, pois AMO!
A maçã cozida, assim como a ameixa hidratada são ótimas para quem está com excesso de vata, e são amiguinhas do seu intestino 🤗

“When we fail to address the cause of any symptom, it is always there. Every tissue and organ in the body is made up of cells. These cells need to feed and eliminate. Cells are fed by carbon and oxygen, making carbohydrates the ideal food. All food has to be metabolised which then creates acid waste. These wastes are eliminated through our bodies lymphatic system. The lymph system carries this acidic waste to our bodies processing units (AKA: Lymphnodes) where the bacteria inside the lymphnodes neutralize these acids and macrophage break down damaged cells (cancer cells) preparing them for removal from the body via our 3 kidneys (left kidney, right kidney and the skin).
Yet, “most” doctors(not all), find cancer cells in the lymph nodes and want to cut them out. This is insane. That is where they're suppose to go, to be broken down and eliminated.
When you understand this, along with the Lymph system, you'll see why Chemo is not the answer. Cancer is a systemic problem. Remove the cause and you remove the symptom.
The blood or vascular system is the nutritional carrier and the lymphatic system is the sewer system. .
Treating an acid condition with more acids is ludicrous. The only way to neutralise acids is to alkalize them. Pouring chemo, an acid into the body, thus destroying it will not create health.
Acid = Inflammation/burn
Alkaline = Healing/soothe
You have to take the power of wellness into your own hands and learn the effects that food has on your body. Alkalize your body, clean out the acidity/toxicity and regenerate your cells.

I’m so dIsappointed at people’s inability to continue learning when it comes to such a new set of values. Viva!'s London Day of Action at Red Tractor Head Office
On 2 January, Channel 4 Dispatches aired a documentary called The Truth About Vegans. In this documentary, Dispatches focused on our investigation of Hogwood Farm. Hogwood is just one example of how a mega pig farm - supplying Tesco and carrying the Red Tractor seal of approval - treats animals.
Red Tractor are well known for approving appallingly low standards of animal welfare. But it is not just Red Tractor that approves pig cruelty. Despite Viva! recording severe overcrowding, pigs covered in excreta, barren, filthy conditions, animals abandoned to die, cannibalism of corpses left to rot amongst the living, and decaying piglets engulfed in a sea of writhing maggots, Tesco have continued to use Hogwood Farm as a supplier!
The routine suffering of pigs on an industrial scale in Britain is unacceptable, and should not be approved by anyone.
Oh my goodness I can’t begin to tell you how good this was. A 10/10 for @Waitrose for this - I loved it! I’m not sure I took a breath to slow down to eat this, it was that good! Fab new option for a quick lunch pick up 🤟🏼🌞

Sweet potato katsu curry was the first on my list to try from the new Plant Kitchen range and it did not disappoint! I’m a huge katsu curry fan (as seen on my grid all the time🙈) and this one was so tasty! It was also really filling which will be fab after a long day at work 🍠🍚🍛😎
