Vegan and eating plant- based doesn't have to be boring! 😍
So for about a month I have been eating complete plant-based.
For 14 years I haven't eaten red meat or chicken, for animal welfare and my own health reasons 😊 But I wanted to test out how my body would react with no fish 🐟, dairy 🧀 and eggs 🍳
I train alot so I always thought 🏃♀️🏋️♀️🤸♀️ that it would affect my energy and my protein levels with no fish etc. But I feel AMAZING 🙏 And I am eating so well!!! 🤗
My Italian mum isn't too happy about it all 😂 but she will deal with it 💁♀️ haha!

My legs are tired! Yesterday at CrossFit we did the Bring Sally Up Squat Challenge.

There's this song on YouTube and basically every time she says to go down, you squat and when she says to come up, you stand up again (no way 😉) It's harder than it sounds and loads of fun to do with someone.
If you want to make it harder, hold a weight while you squat.👊
Macaroni Monday is baaack 👋🏻💃 Made a big bowl of creamy butternut-cashew ziti ( #zitimonday just doesn’t have the same ring 🤣), after my workout tonight and already looking forward to eating the leftovers tomorrow 😃. I shared this sauce recipe last week, but here it is again so you don’t have to go on a scavenger hunt 🔍 (note: this makes a LOT of sauce so you’ll have enough leftover for 3-4 extra meals 🙌🏻).
Creamy cashew butternut sage sauce 👉🏻 3 cups roasted butternut squash (you can prepare this however you want but just ensure the squash is tender) • 1/2 onion diced + 1 garlic clove, sautéed in 1 tsp. oil until tender • 1 cup raw cashews • 3 cups unsweetened cashew milk (or almond milk) • 1/4 tsp. cayenne pepper • 1/2 tsp. dried sage • 1/4 tsp. salt + fresh pepper to taste • Blend all ingredients until smooth 🍥 Tossed with @eatbanza chickpea ziti + sautéed garlicky kale 🌿, sprinkled with red pepper for a little extra kick 🌶💥.

When I went to NYU, I was always so blessed with so many vegan options nearby 🙏 One of the classics has always been @sacredchowvegan which has killed it with their healthy tapas for years 🎉 BUT right now (and for a few more weeks) they’re doing a menu focused on China including these Dan Dan noodles with tempeh, spices, and chewy noodz 🍜.
