Want to try a gluten free lasagna? Why not try this turkey mince lasagna made with butternut squash sheets from @marksandspencer a great alternative to the wheat/wheat substitute pasta sheets. Makes a great winter warmer. .
For all you vegan lovers as well as gluten free change the filling to some veggies and substitute for vegan cheese/milk etc...
1. Sauté in olive oil some of the minced garlic and chilli. Once sizzling... 2. Add 1x onion, 1x celery stick and 1x carrot - all of which should be diced up into small pieces. Sauté these for 3-5 minutes.
3. Now add the turkey mince and brown off
4. Add the fresh tomato, passata, salt, garlic, chilli flakes, oregano, basil, black pepper and a dash of balsamic vinegar. Stir well and allow to simmer for 5 minutes.
5. Add the peas, fresh pepper and mushrooms. Stir well and and cook for a further 5 minutes. >>>>> Time to layer the lasagna. You could make the white sauce or the @marksandspencer White Lasagna sauce will do.
6. In a oven proof dish spread a thin layer of the sauce you have made, followed by the @marksandspencer butternut squash lasagna sheet. Continue to repeat this process until the desired height.
7. On the final layer do not put any of the meat sauce, cover with the white sauce, top with cheese and a sprinkle of oregano and chilli flakes.
8. Place into a pre-heated oven on gas mark 6 for 50minutes.
9. Take out and serve as suggestions shown.
10. Sit back and enjoy 😉.

This may not look appetising, but is actually delicious and filled with such breakfasty goodness.
I’ve been struggling with breakfast recently as I haven’t fancied cereal and toast gets a bit boring.
I had lots of potatoes to use up, so I’m going back to my Vegan breakfast roots with this breakfast hash!
Potato’s, onion, garlic, cumin, cayenne, paprika and turmeric base... then add whatever you fancy!
I added peppers, sweetcorn, red kidney beans, mushrooms, a tin of baked beans and some fresh tomatoes.
There’s enough here for 6-8 mammoth portions that will keep me going till lunch throughout the week.

GREEN SMOOTHIE BOWL
Ingredients ▶️ 1/2 avocado
Big handful of spinach
Scoop of @formnutrition vanilla protein powder
Dash of almond milk
1 kiwi sliced
Small handful of seeds
METHOD ▶️ 1. Blend all the above ingredients apart from the kiwi on high speed until thick , creamy consistency.
2. Serve and add your choice of fruit and the seeds.
Getting those fruit and veg first thing. Yeah baby!

•2 Quorn smokey ham slices
•Red bell pepper
•Side salad for added greens🤪🌱
•And a blob of ketchup for dipping (Ended up adding more because that deffo wasn’t enough🙊)
