It's #friday! I love to treat myself when I hit milestones! I never eat #icecream anymore but there is a YUMMY place near our hotel elevator (how convenient) and I'm absolutely treating myself again today!

Made this puppies on the crepe maker for my dad for lunch😂. Just fry up some lean mince with diced peppers and onions and with your choice of seasoning. I used a fajita one but if your feeling adventurous why not create our own with a bit of paprika, onion powder, garlic powder, cayanne pepper, salt and pepper and whatever else you find in those cupboards!
As that's frying heat up your crepe maker and throw on a tortilla wrap. Make a divide in the middle of the tortilla, Just a small indent using your spatula and put the mince, onion and pepper mix over half the tortilla. Cover in cheese and then fold the tortilla over and flatten down a bit. It should keep it's shape. After it's a bit brown and crispy flip it over until the cheese has melted and the shell holds its shape. Then cut into 3 separate slices and enjoy. Remember to add your veggies too. Made my dad a big salad with this so I kept the quesadillas simple but try some tomatoes and a bit of lettuce!

Add the mix to some lettuce wraps if you want to be healthier but one tortilla wrap won't kill you! Some can even be nutritious!
