There’s a once in a lifetime opportunity a brother gets to toast another brother at his wedding. Nate did an amazing job. He shared from his heart and spoke proudly of Dan. Vegan scrambled eggs 🌱🥚 as requested by @rosiehare as part of my veganize challenge!
I went for scrambled eggs as these are by far the easiest to replicate and can be done in minutes. But will give you some suggestions after the recipe how you can alter it for different egg uses.
Disclaimer: I try to make recipes that are as easy to follow as possible and use easily obtainable ingredients. However to get the desired effect sometimes special ingredients are needed which are usually able to be sourced in the world food section of larger supermarkets, Asian supermarkets or occasionaly online. In particular this recipe uses Kala Namak, otherwise known as Indian black salt, which gives it the eggy flavour; whilst this is cheap and will last you ages I did have to buy mine online.
Tbsp veg butter
Tsp onion powder
Tsp kala namak
1/2 tsp pepper
1 block tofu (approx 300g)
1. Add the first 5 ingredients to a frying pan and fry off for a minute
2. Add your block of tofu and break into pieces
3. Leave to cook for around 5 mins, giving the occasional stir
4. Serve with additional kala namak and black pepper on top if desired
1. Take all the ingredients listed plus 3 heaped tbsp flour and blend. This mixture can then be made into omelettes and quiches
2. Take all the ingredients except the butter and scramble together cold, add vegan mayo and use in a sandwich
3. Take 1 cup plant milk and the seasonings from this recipe plus 1tsp agar agar powder, boil for 10 mins then refrigerate to set. You then have boiled egg texture/taste to slice and use for salads, sandwiches etc
I felt surprisingly good on my run this morning after my hill session yesterday, but I was super hungry afterwards, so I made this big plate for breakfast! -two pieces of whole wheat toast w/pb & strawberry chia seed jam from @strongrunnerchicks - so good!
-egg scramble w/ tomatoes, mushrooms, and a mix of baby chard, baby kale, and baby spinach

Cinnamon Swirl, Nut Butter and Berry Chia Jam for Sweet Potato Toast
3 tbsp nut butter of choice
2 tbsp toasted coconut
1 tbsp chia seeds
1/2 cup fresh strawberries or raspberries
Squeeze of lemon juice
1 tsp rice malt syrup, stevia or raw honey
To make the jam, mash berries with a fork for a more chunky jam, or blitz quickly in a blender. Add a squeeze of lemon juice and rice malt syrup, stevia or honey. Stir in the chia seeds and let sit for 15 minutes.
To make the nut butter, add a good pinch of cinnamon to your favorite nut butter and swirl in.
To assemble the toast, spread on the nut butter, drizzle with chia jam and top with fresh berries, toasted coconut and an extra sprinkle of cinnamon.

happy Wednesday!! I decided to switch up my breakfast game a little bit this morning 😛 finally decided to try a cinnamon raisin Ezekiel English muffin.. so good!! and of course served it with a side of egg whites & fresh fruit 🤩 I’ve gotten a few questions about how I make my egg whites so I’m sharing it today!! it’s super easy and takes less than 5 mins for mega fluffy egg whites!
egg white recipe:
- start by spraying a coffee mug w non stick spray (very important if you don’t want your eggs to stick!!)
- add about 1/2 cup of spinach to the bottom of the mug
- pour in liquid egg whites (I usually estimate about 2/3 cup)
- microwave until eggs rise(depends on microwave- mine takes 1:45)
- when they are cooked through, dump on a plate and break up w a fork! (yes, it’s really that simple!)
