❤️Vegan French Toast & Vanilla Berry Salad❤️ Recipe below!👇 French toast is such a yummy and indulgent weekend breakfast or brunch 😍 A few days ago I saw a big billboard sign (which advertised bread) with big fluffy slices of french toast and I just thought ”OMG I need to make some this weekend!!” 😄 So I whipped some up this morning and am now sitting on the couch with my plate of warm toast with a soft inside and slightly crispy outside and a sweet berry salad 😋 Enjoy the recipe! 🤩
Ingredients (3 servings):
🥛1 cup/250 ml plant milk (for example almond or oat)
🍯1 tbsp maple syrup
🌱2 tbsp chia seeds
🌼0,5 tsp vanilla (powder or extract)
🧂pinch of salt
🥖6 large & thick slices of sourdough bread (good to use slightly stale and sturdy type of bread 👍)
🌿oil for frying (for example coconut)
For the berry salad:
🍓2 cups/500 ml mixed berries (for example strawberries, blueberries, blackberries and pomegranate jewels)
🍯1 tbsp maple syrup or agave
🌼0,5 tsp vanilla (powder or extract)
Directions: Blend plant milk, chia seeds, maple syrup, vanilla and salt in a blender for about 2 minutes until smooth. Pour into a wide dish. Heat the frying pan to medium heat and add a drizzle of oil. Dip both sides of each slice into the batter and fry on low-medium heat for 2-3 minutes on each side until golden brown. Flip gently. While frying the toast, cut the berries into bite size pieces and put in a bowl. Stir in the maple syrup and vanilla. Serve the warm toast with the vanilla berry salad. Use all the lovely maple vanilla berry juice which sits at the bottom of the berry bowl to drizzle over your toast and salad as a perfect sweet glace 👌😋 Have a lovely weekend! 🙏🏻🌈🌼
AHA I got it!!! 😆 I have found my muse!!! I sat there in my patio this morning as my plans of heading out to the garden had changed by Mr. Rain ☔️. So I decided to look out the patio and reminisce on what our garden looked like last year and how much we enjoyed it. As I sat there listening to the rain hearing the birds sing, it came to me. I’ve been revisiting the same thought over and over in my mind, same colors, same textures, same scents. Now I am more excited than ever to make this vision in my mind come true. Probably sounding a little 😜 my friends, so let me explain. I’ve been a little stuck on what to bring into the garden this spring there are many challenges, one big one the MOVE ya that big challenge. I still want a garden, we will still be here till Summer and I can’t imagine not being surrounded by flowers. What rain and the songs of birds can do, thank you Nature. 🐦 🧡🌱💜☔️💚💚💚💚💚💚
💛Scrambled Tofu Wraps💛 Recipe below!👇 A few weeks ago when Canada’s new food guide came out recommending eating less animal products, there was a tofu shortage in many Canadian grocery shops! Tofu is so versatile and can taste great! Many of you have asked me how to use, cook and flavour tofu, so by popular demand: here is one of my favourite recipes! It’s tried and tested on my non-vegan parents who normally don’t eat tofu - they loved it and found the texture creamy & the taste non-tofu-like 😄 Give it a try and let me know what you think! 😃👍 Scrambled Tofu Wraps (4 servings)
🌱1 medium yellow onion
🌿1 medium garlic clove
🌼1 tbsp olive oil
🌟300 gr extra firm tofu
🥥100 ml / 0,4 cup creamy coconut milk
🥄2 tbsp nutritional yeast
☀️1 tsp turmeric powder
🥄0,5 tsp vegetable bouillon powder or 0,5 cube (crumbled)
🧂dash of salt n pepper
🌾2 tbsp chopped fresh chives
☘️2 tbsp chopped fresh parsley
🍁4 tortillas (I used @silverhillsbakery organic whole grain tortillas)
🍀optional: 4 ”leaves” from a spring onion to tie the tortillas together
Directions: Finely chop onion and garlic, sweat in olive oil on low heat for 8-10 minutes until soft, translucent and lightly golden. In the meantime, take the tofu out of its package, give it a quick rinse in cold water and place it in a bowl. Mash with a fork to a crumbly texture. Add coconut milk, turmeric, nutritional yeast and bouillon powder and stir together with a fork. Add to the pan and warm for 3-4 minutes on medium heat. Take the pan off the heat, stir in the fresh herbs and season with salt n pepper to taste. Place 1/4 of the scrambled tofu on each tortilla and roll together. Done! 💥 It’s very nice to have some fresh tomatoes and maybe some red bell peppers and lettuce on the side 👌

Then this tree came along and fell in our backyard the other morning, right after we had let our dog back in. In between putting the bacon in the oven and taking it out. It’s kinda beautiful. It’s a kind of mess. It crushed our new bench. It crushed our dogwood. It’s something fun for the kids to play on. It’s work. It’s process. It’s change. It’s potentiality.
In relationship, in my internal relationship, in my external relationships- non-binary, non-rigid, expandable, relatable, expression, retraction, growth, death, cycle, beauty, and a pain in the ass. All of it. I want all of it.
