Finally tried the #justscramble at @green_common today! 🥚 It was super delicious and fluffy, and went perfectly with the #teriyakibowl. Growing up, I’ve always loved all-day-breakfasts and I was contemplating on getting that with the Just Scrambled instead, but I’m so glad I ended up getting the teriyaki bowl, IT’S SO GOOD. The next item that I tried was the #beyondbao “平安包”, and it tasted super yummy too; the faux meat tasted very much like pork in a bun. We also got the HK style pork cutlet rice (which is veg, not vegan, so I didn’t have any), and spaghetti with mushrooms and veg in black pepper sauce. 🍝 VERY satisfied with lunch today 🤩😌

Tofu Teriyaki Rice Bowl
1 cup of whole grain brown rice
1 pack of organic extra firm tofu
1 cup of snap peas
4 cups of kale
1/2 cup of edamame
1 green onion
1/4 cup of crushed peanuts or cashews
1 cup of shredded carrot
1/4 cup of fresh cilantro
1 avocado 🥑
1 head of broccoli
2 tsp sesame seeds
1/4 cup of coconut aminos
2 tbsp Tamari
1 tsp rice vinegar
2 tsp sesame oil
1/4 cup hoisin
1/4 cup sweet Thai chilli sauce
1 inch minced or pressed fresh ginger
1-2 cloves of fresh pressed garlic
Preheat oven to 400
Starting with your rice, I used a rice cooker which makes it super easy, I let rice cook for 45-50 mins, then kept it on warm and added a bit more water, stirred and covered until everything else was ready. If not using a rice cooker follow instructions on packaging.
Make your sauce and set aside, then wash and chop all veggies ( green onions, cilantro, broccoli, snap peas( just remove stems), carrots 🥕 using a peeler and chop your kale
Remove tofu from packaging and press out all water using a thin dish cloth or paper towel. Press multiple times to rid all water. Chop tofu into cubes or big squares whatever you prefer. Line a baking sheet with parchment paper or tinfoil and spray. In a ziplock mix tofu with 1 tbsp olive oil and 1 tbsp sesame oil, 1 tsp pepper and 1 tsp garlic powder then add 1 tbsp corn starch seal and shake. Bake tofu for 12-15 mins flipping half way through. At the half way mark add your snap peas to opposite side of baking sheet and mix in 1 tbsp of the sauce then cook for the remaining time with tofu. Remove and set aside.
Meanwhile on stove top steam broccoli for 8 minutes. Remove broccoli and add edamame to cook in hot water for 2-3 mins.
Starting with kale as your base add 1-2 tbsp of the sauce and squeeze half the lime. Mix with your hands massaging the kale. Then top with brown rice
Add your diced avocado, shredded carrots, chopped green onions, snap peas, tofu, broccoli, then top with sesame seeds, cashews or peanuts, fresh cilantro and a squeeze of lime. Then pour remaining sauce over top! Enjoy :) #teriyakibowl#healthyfood#tofu#cleaneats#realfood
Meal prep is back. After not meal prepping for a few weeks my husband's gout flared up like crazy and is finally subsiding. Healthy eating doesn't mean just losing weight, healthy eating plays a huge role in overall health. It cured me of GERD, it helps keep gout flare ups to a rare occurrence, it aids in curing type II diabetes etc etc. So instead of telling yourself I have to lose weight take a moment to realize it's so much more than just weight loss. Here is one of the meal preps which is a teriyaki chicken bowl. I have Jasmine rice at the bottom, 2 oz of grilled chicken then topped with red and orange bell pepper, broccoli, and onion. I added teriyaki sauce to the veggies while they were cooking and placed a little bit (1 tblsp) on the rice. 😍🔥 Happy Sunday!!! .
