Quick and yummy dinner alert! These Mexican chicken tacos went down a storm! So easy and great to prepare in advance. Why does everything in a taco taste sooo good! To top it off we enjoyed dinner al fresco tonight in the garden!
Ingredients: chicken breasts (one per person), basmati rice, 1 red pepper, 1 red onion, 2 garlic cloves, 1 vegetable stock cube, 1 tbls tomato purée, 1 cup Passata, Tabasco chipotle pepper, 1 tsp smoked paprika, 1 tsp ground coriander, natural yoghurt and handful fresh coriander for serving. Pack of taco shells.
Method: to prepare the rice cook enough for number of mouths (mine was half a cup of rice for 4 people). In a frying pan gently fry off finely chopped onion, garlic and small cubes of red pepper. Add the tomato paste and purée and crumble in stock cube. Add a dash of water. Fry off for about 10 minutes. Adding more water if necessary. Add a dash of chipotle sauce (more if you want it spicy). Add the cooked rice, stir well and transfer to a dish.
For the chicken cut into strips, fry off with the ground coriander, smoked paprika and a dash of chipotle sauce. Add a dash of water if necessary to stop spices sticking to the pan. Transfer to a dish.
Put taco shells under the grill, chop the coriander and put some yoghurt in a bowl.
Place everything in the center of the table and let everyone assemble their own taco!
