VEGAN “TUNA” SALAD WRAPS by @amelietahiti 💚 Full Recipe:
For the “tuna”:
1 can chickpeas, rinsed & drained
2 ripe tomatoes, cubed
1 small cucumber, cubed
2 tbsp chives, ciseled
3 tbsp soy yoghurt
1/4 tsp salt
1 tsp dijon mustard
1 tsp paprika
1 tbsp nutritional yeast
1. rinse & drained the chickpeas (if you want a better digestion, you can peel off the skin but that’s an extra 10 minutes!)
2. flake them with a fork (or clean hands)
3. add veggies and mix.
4. add spices and yoghurt and mix again
5. set in fridge about 15 minutes so flavour gets together
1 cup all purpose flour
1 tbsp olive oil
1/4 tsp salt
1/4 cup water
Method : simply mix & kneed with one hand until a dough super elastic forms. Adjust flour/water. Set 10 minutes. Then divide in 2 and roll out in very thin wrap (use flour to prevent sticking). Cook 2 minutes each side on hot pan. Keep in clean dishtowel. Use right away or damp the towel with water and microwave 20 sec to make soft again!
Here I served the wrap with cabbage, lettuce avocado & sprout! Enjoy!

- 2 cups of nuts/seeds of choice
(I used 1/2 cup of each: soaked cashews, hazelnut, pumpkin seeds, Brazil nuts)
- 1/4 cup coconut shreds
- 2 scoop @vitalproteins (Optional: great for gut health, joint, and skin)
- 1 tsp of each: @traderjoes pumpkin 🎃 pie spice + turmeric + cardamom
-1/4 cup CBD coconut oil
- 1/3 cup pumpkin 🎃 purée

Hiding behind the kale is a hydrochloric acid (stomach acid) capsule with added gentian root powder (@viridian brand from @wholefoods) because my stomach acid is still low from a long period of stress & swallowing chlorine while practising with my synchronised swimming team (switched to ballet to give my body some💞). A lot of people's stomach acid is low these days. @hormonesbalance book is fabulous and gives guidance how to safely test if you need a top up. You can also do it with a little lemon/lime juice before meals
Enjoyed in half an hour of autumn sunshine for a vit D top up (the happy vitamin I call it - needed for serotonin production, which is the 'happy' hormone). Most people in the UK are deficient & suffer greatly from low mood in the winter.
How this is super healthy for brain & body:
KALE: cruciferous veg are BRAIN FOOD! Plus super cleansing getting any toxins from poor air quality, plastics & the like, out out out please!
LACTOSE FREE CHEESE: did you know various types of cheese are actually lactose free? Cheddar & parmesan are aged for so long that it disappears. And I recently discovered mozzarella is (SCORE!). Always better when you're digesting well (digestive enzymes for a short period can help) but if you're still struggling enjoy this info 👋

Moi qui suis une inconditionnelle de la crème glacée 🍦 (et oui 😜), l’açai est un sorbet et le must c’est qu’on peut le combiner avec pleins de topping !!! 🤤
Granola, coco 🥥, 🍌, 🥜 etc pour les plus gourmands il y a aussi pleins de sirops (chocolat, coco...). Elle peut être très healthy, mais moins si on rajoute beaucoup de topping 😅, elle a goût que j’aurais du mal à dire à quoi elle se rapproche mais c’est assez sucré!
C’est dommage que la glace d’Açai n’est pas proposée en France 🇫🇷. D’ailleurs, on affirme que c’est une super food mais il n’y a pas eu d’études qui l’ont validée, donc je n’en parlerai pas 😌

Granola, coconut 🥥, 🍌, 🥜 etc. for the greediest there are also full of syrups (chocolate, coconut ...). It can be very healthy, but less if you add a lot of topping 😅, it tastes that I would have a hard time saying what it approaches but it's quite sweet!
It is a pity that the ice of Acai is not proposed in France. Moreover, it is said that it is a super food but there are no studies that have validated it, so I will not talk about it 😌

RUBBER BAND STRETCH 🌟This activity is a no-brainer. Just rubber bands and DIY geo board (made by hubby a long time ago) - to distract and refrain him from riffling through the drawers and messing up the newly washed clothes I was folding. The attempt to distract him was successful. He was so occupied stretching the rubber bands. He doesn’t know how to form shapes yet - just random patterns, overlapping one rubber band to another. Great exercise for those tiny hands.
Love having an abundance of good papayas - they make me feel good inside out!
