A leisurely pre-winter morning in Gariahat reconnected me to a few of my favourite street food carts. For the last two decades I have been indulging in bhelpuri made by Ajay Yadavji just in front of Gariahat Pantaloons. Pantaloons then didn’t have little bro big bazar and hence the fourth floor was our go to place for picking up groceries and veggies in air-conditioned peace. It sold decent clothes too. South city mall was in its mom’s belly then. Later we ditched pantaloons forever but still Ajay Ji’s bhelpuri had been a reason to stop the car. After two odd years, this morning I was back at his cart as the first customer. He had just started decorating his tiny mobile shop with tomatoes and chilies. He obliged by leaving decoration half way to make me bhelpuri with ‘kam muri’. As he finished mixing everything and handed me over the paper cone, I asked him ‘khatta jyada dala na?’ He gently smiled with confidence, “kha ke dekhiye na!”. I have always wanted to remodify how street food is seen. So I started making the popular roasted plantain aka BOLI,with some peppered sauce,fish kponmo,oilbean and vegetables, as seen in the picture A, I managed to get a space to start selling at festac. I got an umbrella and made a nice grilling stand to standout from the regular roasted plantain sellers. But the spot as seeing on picture B, was a road side spot with flies everywhere , due to the smell of our food and the plantain peels, it did not depict the healthy street food standard I always wanted even though we had customers coming in. So I had to stop using the spot because they always complained about the flies and it made the food look untidy, I started making from home, for those who order from us which now limited our orders and we send out to them .. the picture on the next page shows an order I was processing from home.
