This 😍😍 It's a gluten free chicken tagine Moroccan wrap from Zaafran - a regular vendor at the Cuba street night markets on Friday and Saturdays.
They first caught my eye when there was a queue lining up outside them on Friday, they were the busiest at the market at that time. We tried them a couple of weeks later and they were so tasty! The chicken had various Moroccan spices, olives, capers and it came with loads of salad and dressing too. Reminded me of all the different flavours we experienced in Morocco last year 😊
The owner is lovely, his wife is coeliac so made these wraps himself and is very proud of them. So he should be!
If you see Zaafran around, don't hesitate! It's a really great fresh and healthy option to go for and something slightly different to the norm 😊👍

(This Curry Ketchup has a balance of savory spices and sweet apple notes. A pop of apple vinegar, with a dry heat you'll taste after each bite!) Currywurst is like Mom's spaghetti, everyone has a twist! But the base is Curry, Ketchup, and Tomato paste over a Pork Sausage. We chose to leave the skin on our Bratwurst, and sear/bake them. Wanna try? Start with:
➡2 TBSP of olive oil over medium heat.
➡ Add one whole Onion.
➡Preheat your oven to 350°.
➡Sweat Onions for 7 minutes. ➡Add S +P.
➡Add Chili for heat.
( It will perfume your oil, OR you can add chili oil)
➡Deglaze with 2 TBSP of Apple Juice.
➡Get your pan hot for your Bratwurst. Use medium-high heat. Don't drop until pan is nice and hot!
➡Cook for 3 minutes on each side.
➡Pop onto a sheet pan, bake for 10-12 minutes on each side at 350°.
➡Add your Curry, 2-4TBSP.
➡Add a pinch of Cayenne Pepper. ➡A pinch of Sugar.
➡Add Tomato Paste. (Taste & season as you go.)
➡Add 1/8 cup Apple Juice. ➡Add 8 ounces of Ketchup.
(Half a standard bottle)
We chose to blend our Curry Ketchup to incorporate the onions. (This lightened the color, it will settle back to red with time.)
Return to pan for 10 minutes. ➡Cook down in 1TBSP Vinegar, 1/2 Cup of water, 1/2 Apple Juice.
Slice sausage, and top with a TON of sauce. In this dish, the sauce is the hero! You can serve this in a roll as well! Delicious.
