T U N A P O T A T O S A L A D 🐟
Friends and family are telling me they’re making my recipes, which is awesome 👏 👏 So exciting! Here’s a super easy salad perfect for summer I started making a few years ago after our Sicily holiday which everyone should make. I originally made it with calamari and just served the leftovers in our lunchboxes with tuna the following day... then just realised it was probably better with tuna to begin with 🤪 Dairy free and with heaps of greens to keep you healthy too 💚💚
4-6 little white or red potatoes
2-3 large handfuls of mixed spinach and rocket
2 tbsp chopped olives
2 tbsp chopped dill and parsley (or just one of the herbs or none, use what you’ve got)
1 x 185g can responsibly sourced yellowfin tuna
Chop potatoes into 6-8 pieces, depending on size. Place in a large saucepan of water and bring to the boil. Simmer for 8 minutes then refresh under cold water.
Juice the lemon.
Add all the ingredients to a large bowl, including the lemon juice and some of the oil from the can of tuna.
Last night's din din was a big salad with warm steamed/roasted veggies and drizzled with a little homemade lemon tahini dressing 👌😋
I don't always eat perfectly, but I do try to at least keep 80% of my foods simple, whole and plant based. The older I get the more I have noticed just how much the foods I eat impacts me. I have noticed that plant based foods give me the most energy, mental clarity, clearer skin, better sleep, healthy immune system, and faster recovery from my intense workouts. I also don't eat for a certain physique.. I instead focus on eating for my health and longevity. MINOR THREAT circa 1983 in front of Dischord House in Arlington Virginia. The internet almost broke when Brian Baker and Dischord Records posted a photo that was made yesterday of these guys all sitting out on the porch in the same position as this. Everyone freaking Minor Threat was gonna have a reunion show 🤣🤣🤣 certainly no one who actually knows anything about Ian or Dischord Records and their ethics... no - never gonna happen! But the old friends did meet up yesterday for a chat.
