Chicken Cauliflower Fried Rice👌
Since starting 2B Mindset the way I think about foods and plate things up has totally changed. VEGGIES MOST is what’s on my mind these days!
I love that this dish gives me an extra serving of veggies, I was able to cut down the carbs (because I consumed way too many earlier in the day) while still feeling as though I got my chicken fried rice fix!
Honestly? I ❤️ this version better than the rice recipe! It left me feeling full and satisfied but more importantly, my stomach doesn’t feel weighed down like it usually does when I eat the rice version!
AND...it was soo easy to make with my awesome Pampered Chef chopper. Quick, Easy AND Delicious!

Don't go for high-sugar snacks though as they provide an energy spike at first, but this will quickly be followed by a dip, leaving you or your child feeling tired and hungry again. Just swap the biscuits for something better, like fruit with nut butter, a bowl of yoghurt, a handful of unsalted nuts, or some popcorn.

Breakfast!! This morning was something new. I tried the new @kodiakcakes frozen pancakes and I will definitely be having these again. They are so good and so convenient- I just had to microwave them for about a minute and a half.
For the toppings~~~ I just cooked a banana in a pan to soften it and carmelize it🤤🤤 Also topped my pancakes with @nutzez French toast flavored almond butter! This stuff tastes just like French toasts and all the ingredients are real and healthy!
Lastly, I added maple syrup, ofc! This was seriously sooo good everyone should go get these pancakes from the store!! Hope everyone had a great day and an even better breakfast😉😉🥞

You know what I love about making a tuna noodle casserole? No one else eats it. 💃🏼🙌🏻 Got to cook things for myself sometimes. I used one 11oz carton of @pacificfoods cream of mushroom, 1/2 C of @ripplefoods original unsweetened milk, s+p, about 2 C of cooked pasta, a can of @wildplanetfoods tuna and some boiled broccoli I had left over in the fridge. Topped with crushed sourdough pretzels. Baked at 425 just until it bubbles and the crumbs start to brown. Delicious! Now, I just need to try making a dairy free cream of mushroom soup... 🤔 #organic#lunch#iwasreallyhungry#lovebroccoli#tuna#justformama#quickandeasy
🇬🇧 Dinner. Rice&corn pasta, zucchini pesto, red chili flackes and poppy seed... And I'll probably add some nutritional yeast, haven't decided yet. 🇮🇹 Cena. Not going to lie... between the nonstop rain ☔️ and what felt like 5 trillion things that had to get done NOW, last week was overwhelming. 🙃 I hate catching myself being one of those “I have so much to do...” people, so I decided to take my own advice and take care of myself even MORE when I felt things get a little turbulent. 🌪
So instead of pushing myself to the breaking point like so many of us do...
I didn’t set an alarm on Saturday morning 😱 and slept a blissful 12 hours my body needed 😴...
I made time for my favorite workout even when I wanted to cancel 💃🏻... We had plans with friends that I FULLY enjoyed, phone down 📵... And I sat down and ate breakfast this morning WITHOUT distractions 🍽 so I could actually taste my food and listen to my body 😋 ... Like most aspects of health, and especially nutrition, it’s the LITTLE things that add up to have a HUGE impact on our overall health and well being. 🙌🏼 Let’s get back to BASICS.
Wellness doesn’t have to be complicated, trendy, or the latest superfood. It can be sitting quietly for 5 minutes to regroup 🧘🏻♀️, doing something you love, prioritizing eating more vegetables 🍅🌶🥦🥕 or knowing that mindfully eating a bowl of ice cream 🍨 will help you just a little in the moment. 😇
