Sometimes we run out of steam and inspiration 🤷🏽♀️🙅♂️ as to what to dish up to the kiddies as the week draws to a close. In last week’s TMix+ newsletter ( subscribe via our website) Geoff Slattery shared his super quick, super easy, super nutritious and #kidfriendly recipe for Squiggly Pasta With Carrots, For Kids. Not a recipe for the Thermomix but we’re sure you can give it a little rest. Recipe: Squiggly Pasta With Carrots, For Kids.
*200 g squiggly pasta – I prefer spiralle.
*3-4 baby carrots, grated
*virgin olive oil
*50 gms butter, softened
*zest of 1 lime (or lemon)
*1 chilli, chopped finely – (Check with your kids first?)
*a little lime juice
*1 dessertspoon poppy seeds
*fresh herbs – If it’s summer, go for tarragon or Chervil; in winter, a little coriander is worth a dash; and any other time, lots of fresh roughly chopped parsley
*grated Parmigianio Reggiano or Grana Padano
1 Cook the pasta, as instructed on the packet. While the pasta is cooking, toss the grated carrot in just-hot olive oil and add the butter, zest and chilli. Toss through, until the butter has reached that very soft stage, just before it gives up the ghost and melts.
2 Add the cooked pasta, the lime juice and poppy seeds, and toss all about until incorporated. Now, the butter will give up the ghost, and just melt.
3 Add the fresh herbs, and work through. Serve the cheese at the table.

8 ounces wide rice noodles⠀
1 pound lean ground pork⠀
2 tablespoons chopped fresh mint, divided ⠀
6 teaspoons fish sauce, divided ⠀
2 tablespoons sweet red chili sauce ⠀
2 tablespoons lime juice ⠀
1 tablespoon toasted sesame oil ⠀
1 12-ounce bag broccoli slaw Lime wedges for serving⠀
START: Bring 5 cups water to a boil in a large pot over high heat. Add noodles and cook, stirring frequently, until just tender, 4 to 6 minutes, or according to package directions. Drain, rinse well with cold water and let stand in the colander to drain. ⠀
Meanwhile, combine pork, 1 tablespoon mint and 2 teaspoons fish sauce in a bowl. Form the mixture into eight 3-inch patties. ⠀
Heat a large grill pan or cast-iron skillet over medium-high heat. Coat with cooking spray, add the patties, partially cover and cook for 3 minutes. Turn over and cook for 3 minutes, then turn back over and cook on the first side again until cooked through, 1 to 2 minutes more. ⠀
Combine the remaining 4 teaspoons fish sauce, chili sauce, lime juice and sesame oil in a large bowl. Add the rice noodles and broccoli slaw and gently toss until well combined. Serve the pork patties on the noodles, sprinkled with the remaining 1 tablespoon mint. Serve with lime wedges, if desired.
I've knocked over my cheap Amazon tripod one too many times and finally shattered my phone holder. Instead of buying a new one I decided to make one out of some walnut scraps I had laying around. It still needs some trimming and shaping but it is very functional.

A quick yet filling and tasty lunch today. It's a tomato tuna sauce on @sanremopasta pulse pasta. This pasta has a lot more protein and less carbs than normal white pasta, which means it fills you up but keeps you going.

And dinner for the kiddos...Naan Bread Pizza! 🍕Love this because it’s a super easy go-to that’s great to make for them when I know they won’t eat what we’re having for dinner. I keep a pack or two of these ready made Naan breads in my freezer. When I need them, I just toss them in the microwave for 30-45 sec to defrost, then top with some marinara, mozzarella and pepperoni, and cook in my toaster oven on 450 for about 5 min and it’s done. Super quick, super easy, and kids love them! 🙌🏼

Taco Night 🌮
One more pre-made packet that I love! This saves time and energy! ⏱🛒For tacos🌮, I’m a fan of the @oldelpaso hard taco dinner kit complete with taco seasoning and 2 packets of sauce! 🌶🍅 .
* Old El Paso Hard Taco Dinner Kit
* Large sized soft tortilla shells (if hard shells aren’t your thing) * 2 lbs of ground beef .* 4 cloves of garlic .
* Your choice of shredded cheese (I prefer the Mexican Blend) .
* 2 white onions .
* 1 can of black beans .
* 2 tomatoes .
* 1/2 head of iceberg lettuce or red cabbage *
. 2 bell peppers .
* 1 red or green chili pepper (optional) .
* 1 Sour cream .
* 2 Avocados .
* In hot pan, brown ground beef on medium-high. Drain any excess liquid. Once drained, add seasoning mix and 1/4 cup of water. Add minced garlic and hot chili pepper. Cook beef with lid on simmer .
* While beef is simmering, dice onions, tomatoes, bell peppers and either iceberg lettuce or red cabbage. Place each ingredient into separate bowls.
* Open, drain, and add beans into separate bowls.

Crisp baked tortillas filled with egg, cheese, chorizo and black beans that are super simple to make first thing and enjoy for the week. A little sliced avocado, a little pico de gallo on the side and you’ve got yourself a party!

Happy National Pasta Day! When we went gluten free my first thought was “I can’t give up my pasta!!” But with fabulous companies out there like @tolerant.foods@eatbanza and @ancientharvest you can ditch the gluten and still indulge in your favorite pasta dishes!
Because these pastas can be a bit hearty I eat 1-1 1/2 cups of pasta and fill the rest of my plate with veggies! Pictured is the cheese free Mac and Cheese from the Instant Loss Cookbook, the Bacon and Brussels, and a simple Zucchini fry. ❤️ Just because you eat well doesn’t mean you have to give up the foods you love! It was actually cold here yesterday in Arizona, the high was only 66 degrees, a little windy 💨 and it sprinkled ☔️off and on which also means it was the perfect day to make a hearty delicious soup 🥣 for dinner! Chicken and Dumplings is a family favorite and surprisingly I can get my kids to eat entire spoonfuls 🥄 of vegetables as long as there’s a dumpling waiting in their bowl!! 🤩 Because it’s so easy to cook with Thrive groceries I made a nice big batch and took some over to my neighbors (retirees from Canada 🇨🇦) who just got into town but were both suffering from a bad cold 🤧! They were so grateful because neither of them was feeling up to making dinner! I’m so grateful for how having Thrive groceries in my pantry not only left with my family but allows me to bless those around us as well! 💝 Grocery shopping @rachelsthriving .
THRIVE Chicken & Dumplings
10 cups water
1 cup THRIVE Veloute Sauce
8 -10 tsp THRIVE Chicken Bouillon
2 cups THRIVE Chopped Chicken
1 cup THRIVE Green Peas
1 cup THRIVE Sweet Corn
1/2 cup THRIVE Celery
1/2 cup THRIVE Chopped Onion
1/2 cup THRIVE Carrot Dices
Salt and Pepper to taste
2 cups THRIVE Flour
1 teaspoon THRIVE Salt
Fill large stock pot with 10 cups water and place on stove over medium high heat. Whisk in
Veloute and Chicken Bouillon until dissolved. Add the remaining ingredients and stir to combine. Bring mixture to a boil. While waiting for soup to boil prepare the dumplings.
To prepare the dumplings: Mix the flour with the salt and mound together in a mixing bowl. Beginning at the center of the mound, drizzle a small amount of ice water over the flour. Using your fingers, and moving from the center to the sides of the bowl, gradually incorporate about 3/4 cup of ice water. Knead the dough and form it into ball.
Pull off a piece and drop into the simmering soup. Repeat. Gently stir motion so the dumplings become submerged and cook evenly. Cook until the dumplings float and are no longer doughy, 3 to 4 minutes. ***If you aren't a fan of the larger ball type dumplings then you can roll out the dough and cut into 1in square pieces and drop those into the pot one at a time.
I eat a lot of chicken wings. They are my favorite appetizer that sometimes turns into a full meal. So it's important when I say that these CHILI COFFEE STICKY WINGS are top 5 on my all-time wing list. Do with that what you will, but the LINK is IN THE PROFILE! ()
I’ve always used all the time I have in the gym working out and just not allowing any time for stretching or using a foam roller. My recovery has never been as good as it has now when I have allowed a solid 15 minutes to stretch each session

Did a little mini meal prep to get me through the rest of my busy week!
I’ll be at school quite a bit over the next few days helping out with one of @naturalgourmetinstitute’s amazing Friday Night Dinners. So I took some time for some self care this morning and whipped up some eats to take the pressure off cooking for the rest of the week👏🏼
✨Miso roasted cauliflower (recipe on my blog)

✨Purple cabbage stir fry
✨Orange segments (hello easy snack!)

This #vegan dish may not look like much, but it’s #proteinpacked and it’s also our #quickandeasy lunch or dinner when we’re totally out of ideas. Just sauté 2 large minced yellow onions in some olive oil, add 3 cans of beans in tomato sauce and 1 large can of good quality #passata, 3 bay leaves, 2 tbs (yup!) dry tryme, 1 tbs smoked paprika (this one is KEY), 1 tbs paprika, salt and pepper and simmer for 15-20 min on medium heat. Done! So easy and satisfying!
