Loved tonight’s porcini mushroom & spinach ravioli by @dellugo from @waitrose. I made a tomato and garlic sauce with artichokes, olives, capers & courgettes. Served with crispy kale and slow cooked balsamic red onions. Massive flavour bomb 😄 You can buy garlic baguettes too from many supermarkets which contain margarine or extra virgin olive oil which makes them vegan 👍🏻

I can't even describe the feeling giving water to such an intelligent, terrified and helpless person. There was a moment where this pig and I didn't break eye contact. Did you know that before the 17th century, almost all cultivated #carrots were deep purple, almost black, in color? Today, the purple carrot is making a comeback as health-conscious consumers are showing interest in this funky-looking heirloom vegetable. While purple carrots provide many of the same health benefits as orange carrots, they also offer some extraordinary nutritional benefits due to their high concentration of anthocyanins. For those who don't have a background in nutritional sciences, anthocyanins are flavonoid pigments that give many blue, purple, and black vegetables and berries their intense hues and strong health-boosting properties.
In yellow and #purplecarrots, lutein represents almost half of the total carotenoids. By contrast, in orange carrots, beta-carotene is the dominating carotenoid (65%). Purple carrots contain higher amounts of phenolics (especially anthocyanins) and show higher antioxidant capacity than their orange and yellow counterparts.
In laboratory studies, these plant pigments have been shown to exert extremely strong antioxidant effects (even stronger than vitamin E analogues). Considering the significant amounts of anthocyanins in purple carrots, it is not surprising that purple carrot varieties, such as Purple Haze, have been shown to have stronger antioxidant activity than their yellow and orange counterparts.
A group of researchers from the Department of Nutrition and Food Science at the University of Maryland analyzed the chemopreventive effects of anthocyanin extracts from various natural sources against colon cancer, and found that all anthocyanin extracts were capable of inhibiting the growth of colon #cancer cells.
Research suggests that #anthocyanins have strong anti-inflammatory properties which might help alleviate symptoms associated with inflammatory conditions such as rheumatoid #arthritis. Some experts believe that the anti-inflammatory properties of anthocyanins may be even stronger than those of aspirin.

So I ended my fruit/juice cleanse on day 7. It was getting a little bit much for me 🙈, I started craving sweet potato and chickpea soup so I broke it with that. It was soooo tasty. I felt nice and calm after that though, it took the edge of the detox. And tonight I made this yummy dish. It's a little cooked food heavy, but hey ho, it's all plant based and feels super comforting. 😌 The cashew cream sauce I whipped up was so good too if I do say so myself. 😆
The ingredients: 🌸Green pea fuesli. 🌸Olive oil roasted veggies including - carrot, beetroot, red onion, broccoli, cauliflower (I used sweet red pepper another one which was a great addition too). 🌸Cashew Cream Sauce:
About 2 handfuls of cashews
1 tbsp maple syrup
1 clove garlic
1 tbsp toasted sesame oil
2 tbsp Tamari
A little water to get that saucy consistency
I used a high speed blender for the sauce and used about 3 tablespoons of it to mix into the pasta. And you can save the rest of the sauce for another day in an air tight jar in the fridge if ya want! 🌞

🍄Mushroom cream 🍝😍 w/ pasta 👅
For 2 servings:
- 1 cup of tofu cream (or mix 1/4 tofu and 1/5 water to make)
- dairy free butter
- oil olive
- 1 sliced shallot
- 2 cloves garlic
- 1/2 of rosemary
- 1/2 of thyme
- 200gr of sliced mushroom
- 1 tsp of Dijon's mustard
1) In a pan, add butter. Brown shallot for beginning and brown garlic.
2) Add thyme, rosemary, oil olive and 200gr of mushroom. Season with a pinch of salt and pepper
3) Add all in the blender with tofu cream and Dijon's mustard. Mix all
4) In the pan, add butter and oil olive a little and mushroom. Season mushroom
5) Add mushroom cream. Let cook 5 mins.
6) Add 400gr of cooked pasta, mix and for topping parsley
7) Enjoy ~ 🌟

Truly an amazing experience and a wonderful accomplishment to the end of a training cycle.
Bighorn 32 miler proved to be everything I expected and more: tough terrain, muddy trails, mist, fog, sun, and looooong downhills to complement the steep climbs. I'm so humbled by the land and the community of runners I was surrounded by in Saturday.
This was a big win for me for many reasons, but for now, I'll end with this: if you want to go out to the middle of nowhere and see what the wilderness has to offer as a challenge, come up to Wyoming. You won't be disappointed.

No solo debes buscar opciones altas en proteína vegetal que cumplan con tu requerimientos de proteína diaria. También debes tener en cuenta que es muy fácil tener deficiencia de hierro. “Hay dos tipos de hierro hemo y el hierro no hemo, el hemo es el de mejor absorción. El que encontramos en la proteína vegetal es el no hemo, por lo que se absorbe en menor cantidad”.
Por eso se recomienda: - Acompañar los alimentos altos en hierro como: legumbres , frutos secos🌰, cereales integrales🍚, verdura de hoja verde🌿, o quinoa, con una fuente de vitamina C, como: verdura fresca🥕, fruta, zumo de limón, perejil🌿 picado), esto hará que el hierro se absorba en mucha mayor cantidad.
- Tomar té verdeo café ☕️ al menos media hora después de las comidas principales, ya que estos interrumpen la correcta absorción de hierro.
- Consumir productos fermentados ocasionalemente. 🍶

I like variety when it comes to lunch and 3 different purple sweet potato toasts really hit the spot! Toast one: @kitehillfoods chive cream cheese, strawberries and chia seeds. Toast two: almond butter + bluebs and toast three: double avo and daikon greens✨🥑
I got home and instantly wanted some greens, but was also wanting something sweet. Generally, I will always default to oats, but since I wanted something a little lighter and cooler, I went for a smoothie bowl. I’ve been pretty obsessed with this mango matcha smoothie the last couple of weeks. Today, I had time to make it a little prettier instead of just dumping it into my tumbler cup and running out the door. 🤗
Mango Matcha Smoothie Bowl
1 banana, ripe
2 handfuls of fresh spinach
1 tsp matcha
1 cup frozen mango
1/4 cup rolled oats
1 tbsp chia seeds
1 cup unsweetened soy milk (or more if you want more of a smoothie consistency) 🍃
Add all ingredients to a high speed blender and blend on high until fully blended. Add blended mixture to some bowls and top with fruit and other goodies. I chose banana slices, cherry, strawberry, blueberry, coconut, nibs and seeds. 🌈 Bowls and wooden spoons in photo are by @coconutbowls. 🥥
It is HOT here in Ohio (like 95 degrees), so a post workout smoothie bowl was necessary. Can you believe that I made an avocado free smoothie bowl?! Shocking😂🥑. I really like this combination and it’s packed with nutrients. My @omegajuicing blender made it super creamy! What’s in it: steamed then frozen cauliflower, frozen peas, 1/2 medium banana, homemade coconut yogurt, tons of frozen blueberries, almond butter, filtered water, fresh ginger and Ceylon cinnamon. YUM.

It's officially my favourite time of year! sum-sum-summmer! Sunny days, high temps (I love the heat!) and my local grocery store being jam packed with SO many new colourful options. It was so easy eating the rainbow this week! I have a lot on the go this week, so I made a mix of raw and cooked meals that can travel well and are easy to assemble! It's a total grab and go kinda week. All the yummy dets below!👇🏻
☀️wake up: as always! my non-negotiable morning routine! I can't live without my pre-squeezed lemon juice. 2 tbsp + warmish water (I use a pint sized glass!) and... CHUG! This helps flush my digestive system + hydrates the body first thing in the morning! It's a total detox game-changer for me!
🥝breakfast: I was feelin' the hot summer vibes and decided to make my anti-inflammatory tie-dye tropical-turmeric berry chia parfaits. Packed with pineapple, turmeric, @enjoyyoso coconut yogurt, kiwis and blubs! This combo is soooo good and the perfect sunny start to my day. I've also prepared some of my @stasherbag for some green smoothies. I just need to take them out of the freezer, add in my superfoods, protein and nut milk... and blend! It's now smoothie season so I'll be creating some more combos for the next couple months. Maybe I'll do a smoothie prep post?
🥗lunch: It's all about the raw salads these days! This week, I created a new summer-y combo that includes butter beans (thanks for getting me hooked @daniellelevynutrition ), carrots, yellow peppers and purple cabbage! I made a simple garlic hummus-kale herby dressing for this salad and will be topping them with my new obsession @rawcology rockin' ranch coconut chips! I also made my dragon bowl mason jar salads inspired by @auxvivres_ I still have some of the 'Dragon Sauce' I brought back from Montreal that I've been slowly using up! I'll just have to go back for a visit to grab some more when it's all done!😉 more dets below in the comments! 👇🏻
