Trying to use up what’s left in my fridge and couldn’t be happier with results - this is my absolute fav combo 😍😍 homemade #chiaseedjam details below
Before I started my #guthealing journey I ate so much jam (to go with all the Pb 😋) but it wasn’t until I started eating refined sugar free that I realised how much hidden sugar there is in store bought jam! Refined sugar is really bad for #guthealth as it feeds the bad bacteria which causes an imbalance that leads to bloating, inflammation, feeling sluggish etc. So if you are trying to cut down on sugar or working on healing your gut then I definitely recommend making your own jam! Super quick and easy and tastes great!
Who says you can’t enjoy your favourite foods just because your eating healthier!
Chia jam: ~ heat 2 cups chosen fruit (I used strawberries) in pan on medium heat & cook until soft and liquid like (about 5 mins). ~ mash fruit to desired consistency (I made mine more lumpy). ~ remove from heat & add sweetener to taste (I usually don’t use sweetener because I tend to find the fruit sweet enough but can use honey, stevia etc). ~ add 1/8 cup of chia seeds and combine (can add more if desired). ~ let cool and enjoy 😄
healthy peanut butter & jelly cookies!!!! these vegan, grain-free, sugar-free pb&j cookies are NUTS🥜🍪, soft, chewy, and gooey af 🤤. i’ve been eating at least two a day✌🏼
1 cup almond flour
1/4 cup golden monk fruit (used: @lakantosweetener)
1/4 cup peanut butter (used: @crazyrichardspb)
pinch of sea salt
1/2 tsp baking soda
2 scoops collagen
1/2 tsp l-glutamine
2 flax eggs
2 tbsp brain octane, mct, or coconut oil
4 drops vanilla stevia (1 tsp vanilla extract)
strawberry chia jam *see directions*
(makes 18 cookies: ~8.3g fat, 3.4g net carbs per cookie)
directions: pre-heat oven to 350 degrees. in a mixing bowl add all dry ingredients then pb, flax egg, healthy oil of choice, and vanilla. mix and then add in strawberry chia jam. form and gently shape peanut butter and jelly cookies onto parchment paper greased with coco oil. pop cookies in oven 15-25 mins and pb&j all the way. 🤤🥜
*strawberry chia jam notes* - heat a saucepan with coconut oil and add 1 cup chopped strawberries 🍓(or berries of choice), 1/4 tsp cinnamon, and sauté for 5 minutes or until soft. then mix in 1 tbsp of chia seeds and transfer jam into a mason jar and place in fridge for 5-10 minutes to cool down. yo jam is done. no sugar. no bs.

Little known fact, I am actually trash at making oatmeal. Most of the time it comes out having the most ungodly & inedible consistency; it’s easier to make pancakes or waffles so that’s normally what I end up sticking to. 😂
But now after years of being the world’s worst oatmeal cook, I’ve finally figured out a recipe that works for me! I’m really not a fan of protein powder in oats, it always clumps or makes the oats too watery. Instead, I opt for egg whites as a source of protein! As a bonus, they make your oats EXTRA fluffy! 🥚
1) Mix 1/2 a cup of oats with 1/2 a cup of water & 1/2 a cup of egg whites.
2) Cook on medium/low heat (or just pop in the microwave) stirring frequently until you reach your ideal consistency.
3) Remove from heat & add in sweeter, vanilla extract, nutmeg, & cinnamon.
4) Top with your favorite fruits, nut butters, etc!
I chose to top my oats with raspberries, freeze dried strawberries, & a mix of pecan butter + @pbfit.official!

Vegan Pb & J pancakes! So easy to make and tastes so good 🤩 I’m not actually vegan but I’ve found dairy and eggs cause bloating and inflammation in my gut so I tend to eat a lot of vegan alternatives!
Details: 1 small banana, 1/3 cup oats, cashew milk, cinnamon to taste and a pinch of salt
Just blend until creamy and cook on low heat with coconut oil ☺️ is it just me or does everyone’s first pancake turn out horribly?? I hid it at the bottom of stack 😂
I also like to add a tsp of maca powder for hormone balance (I’ve been taking for a few months and I think it’s been helping with PCOS symptoms) it’s also adds a nutty flavour that tastes great!!

6 miles done before 8am 🏃🏽♀️ and that’s how you crush a Monday 🏃🏽♀️ Lately I have been craving peanut butter & jelly like no other, which means breakfast had to be PBJ oats 👌🏻 How to 👉🏻 I took 1/2 cup of rolled oats, 1/2 cup of @califiafarms almond milk, and cinnamon then soaked them all together overnight. This morning I put the oats in a bowl, microwaved them for 1 minute and then for 30 seconds, then I added @earthbalance peanut butter and blueberry preserves with a sliced banana 🍇🍌🥜 Hope everyone is having an awesome start to their week 💕

Real life: PB&J for dinner 😎 I was so excited to make quinoa veggie burgers and roast for some veggies for dinner and they failed.. miserably. Like, not only did they not look good, but they honestly tasted pretty gross too. Oh well! Instead of wasting even more money on food (they were not salvageable) and ordering food, I just made a PB&J sandwich. It didn’t fill me up fully, so I had some leftover lo-mein too. This is unglamorous #reallife, but it’s also life without food rules ✌🏼 Hope your Monday’s holding up better than mine! (hehe get it.. bc my veggie burgers didn’t hold up 😳)
