Every day I’m learning new things about myself like (weird moment): I can’t casually eat pineapples 🍍 before a meal bc they leave a weird taste in my mouth. Is that just me?? 😂👀, don’t leave me hanging! The chicken in this taco was marinated in pineapple juice ... let’s just say it got very interesting!

Day 5. Y'all might have noticed I had a bad baking weekend... which extended to a bad baking Monday. It was devastating, humbling and exhausting. I needed an easy win and some downtime to wrap some presents... so what a great time to try making a VEGAN biscotti. Honestly, I wasn’t ever a stan, but consider my tired heart changed. Meet my very easy cherry pistachio vegan biscotti, made very unvegan with chocolate because it's been a hard couple of days in the kitchen.

This picture was taken exactly 2 years ago inside my Hoboken townhouse. That winter I just learnt how to make hotsauce and decided to make hotsauce as a holiday gift for my colleagues, friends & some family. I used a random photo out of the internet - a girl wearing Santa’s hat and used color printer at work @gap (Shhhhh don’t tell them please) and called my sauce Silly Chilly Hotsauce just for fun.
The wired Emerald stone tree you see on the left hand side - I made it for my uncle and aunt. My uncle loves plants and he always says human will betray you but a tree won’t. I don’t have a green thumb so Took an workshop just to make this wired tree for him.
Left hand side the green jar you see is Herb 🌿 olive oil I made for myself as I got into herbs that year.
I don’t know where this journey will end but I love looking back and cherish these moments because that’s when it all started- without knowing I started falling in love.
Currently sipping on this beauty 😍 I am home for the holidays and I am so excited!! I haven’t had a blender at school (I know, I need to get one ASAP) so I have been on a major smoothie crave since I’ve been home, like I could have them for every meal and I would be happy. Although I haven’t been the most active on this page, and as I am a very small Instagram page, I’m so thankful I started it this year just to feel like I’m active in the health and wellness community on IG. It’s such a supportive feeling when you get to see so many others interested in health and wellness too ☺️ I’m hoping with this next year I will start to use this page more and create more friendships! Taco Tuesday, who dis? I woke up this morning craving all things savory, AND I had a perfectly ripe avocado, so this breakfast burrito/taco had to go down...it was fate 😏
. ➡️ I heated up a @mikeys paleo tortilla on a skillet, and topped it with organic greens, half of an avocado 🥑, sautéed mushrooms, and an organic pasture-raised egg; all sprinkled with red pepper flakes! 💃🏼 Happy Tuesday!
Chewy or Cakey? I’m all about the chewy brownie. What’s the trick ? First of all, add more butter and chocolate; I used 200 grams of good quality dark chocolate. Second - don’t use as much flour. And last, reduce the baking time!
My husband was the true MVP last night! New schedule means I don’t get home until about 7:30pm now (dinner ideas, send them my way please!!) and I knew I took out chicken for dinner. Driving home from my workout (which I probably shouldn’t have went as HAM as I did because I thought I was going to DIEE from being sick all weekend) I have no idea what I was going to do and I HATEEE the “what’s for dinner” question.. walked in my house and bam. Dinner was done. My husband even used low carb tortillas for mine!! Ughhh I’m telling you - it’s the little things. I don’t mind cooking at all, but I honestly wasn’t feeling it last night!
Chicken enchilada in a carb smart tortilla topped with reduced fat cheese and enchilada sauce, 2 tbsp light sour cream, a little yellow rice and a little beans. He did GOOD!

Peanut Butter - Coconut Fudge Bars -> they literally taste like sweet caramel-y candy 🥜
1/4 cup melted coconut oil
1/4 cup pure maple syrup (or swap honey?)
3/4 cup peanut butter
1-2 tablespoons dried shredded coconut or crushed peanuts as optional mix ins
Dark chocolate to drizzle
•Heat coconut oil and maple syrup, add in peanut butter and mix well.
•Freeze in a mould for 1-2 hours (cupcake liners will work too)
•Drizzle with melted chocolate
