Few things are more exciting than tasting a new amaro for the first time. (If you're me, anyway.) Today's acquisition, the Borsci, comes from Puglia, and this one is really different from most other amari I've tried. It pours molasses-dark and completely opaque, and right away I get an overwhelming nose of butterscotch (seriously, like Brach's butterscotch candies). But go deeper and there's coffee, cocoa, herbs, and dried dark fruit, plus the kinds of non-food smells that always blow my hair back: tar, earthy/barky things, cigar, rubber tire. It leans sweet, but it has a long, insistent finish that returns to the bitter complexity. I tend to prefer herbal amari to the more baking spice-forward types, but I am not even sure where I'd categorize this one, which is something I rather like about it.
Another thing I like about it is its proof (38% = 76 proof!), which is much boozier than most of its peers.
For its maiden cocktail voyage, I wanted it to be the focus, so it's an amaro sour, propped up with a little rum (which is the base spirit for this amaro), and balanced with a little extra bitter from the Luxardo Bitter.
Borsci Amaro Sour
1 1/2 oz Borsci amaro
1/2 Luxardo Bitter
3/4 oz aged rum
skinny 3/4 oz lemon juice
1/4 oz orgeat
1 egg white

Desert to drink inspo!
This fellow is entirely inspired by one of my favorite desserts at a local restaurant, @sugarbeetrestaurant. They serve coconut ice cream over grilled pineapple topped with marcona almonds. Great combo, right?! I naturally paired these flavors with rum and the Kula Painkiller was born, in vintage @tikifarm 2000 Kula mug.
Dark rum, Logan’s Pineapple Coconut Shrub, Amaretto, coconut cream:::grilled pineapple, toasted marcona almonds, fronds
We are often asked “what’s your favorite drink?” That’s a tricky question because not every bartender can pour 5 shots at once like @freddy.chase in this video or make a killer cocktail like a master mixologist. So the real question becomes, “Do you trust your bartender?” Unfortunately the answer is typically NO and my favorite drink quickly turns into a beer and a shot.
