Not bad! The recipe was not just for the meatloaf, but for "mashed" cauliflower and cooked spinach, as well (nutrition info was for the entire meal, I believe). Obviously I substituted peas for spinach. The meatloaf is made from ground turkey and obviously isn't smothered in ketchup, so it's not your mama's meatloaf! But if you are tired of chicken breasts and broccoli every day, this is a decent guilt-free alternative.
(*note* - the meatloaf recipe called for 2 egg whites as a binding agent per 3 oz meat, which is one serving. I quadrupled the recipe but only used 4 egg whites, and it worked fine.) #bobharper#skinnymeals#mightymeatloaf#cleaneating
