So I decided to step back from keto and just go for a general low carb diet (in the range of 50 to 80 a day. 100 at most). After toying around with it and doing some more research, I figured it wasn't the best course of action for me. I'm simply not prepared to eliminate some of my favorite foods for life, lest I want to gain back all the weight I lost.
So I'm just gonna take a more responsible route. Not eating bread just to eat bread, go for beneficial carbs like beans and oats, and go for fruit when I get a sweet tooth craving (I'm pretty sure no one got diabetes from eating apples and oranges after all). So here's a meal that's not quite keto but still low carb. Just an omelette, Mexican style with bacon, chorizo, peppers, onions, salsa Verde, tapatio, refried beans, guacamole and mission's carb counter tortillas. Mmm.

Flat Iron Steak Tacos with Salsa Ranchera. The steak was simple seasoned with Weber brand carne asada seasoning. Seared in a cast iron skillet for 3 minutes per side and finished in a 500 degree oven for 6-7 minutes. Pulled out of the oven when the internal temperature was at 125-130 degrees. I made chicken enchiladas today. It’s my husband favorite. The secret is in the sauce. I got the recipe from an old Mexican cookbook, it’s simple and easy to make . I asked some of you lot on my stories yesterday if you’d like to see more of my cooking on my page, and I got a big fat yes! Being on maternity leave means that I have more time than usual for cooking, so I’ve been rustling up some lovely grub lately and feeling really inspired! I’ve been trying to cut our meat consumption a bit lately so tonight’s tea was a vegetarian Quesadilla pie. You make a veggie fajita type filling (onions, peppers, beans, corn- whatever you’ve got) then in a cake tin layer it up between tortilla wraps- then bake! As it’s a Friday I also made some nacho’s too as a treat 🌮🌽🥕🌶

Here I have added in a heap of veg to the taco mixture including diced mushrooms, grated zucchini, carrot and butter beans + have a heap of veggie sides such as baby spinach, cos lettuce, kale slaw, avocado and salsa (made from canned tomatoes) + brown rice (loving these quick microwave cups from @sunrice ), wholegrain wraps & grated cheese
I can never make my mind up and love having a variety of extras to choose from. Maybe I want a wrap or maybe I want more of a burrito bowl type thing or maybe I want a bit of both?🤷🏼♀️🥗🌯 What would you choose?

- 1/2 cebolla en octavos
- 1 diente de ajo en trozos
- 2 jitomates en cubos
- 1 taza de frijoles cocidos
- 1 taza de caldo de pollo
- 2 chiles pasilla limpios, remojados y sin semillas
- 2 tazas de caldo de pollo
- 2 hojas de laurel seco
- 1 cdita de tomillo
- 1 cdita de mejorana
- suficiente aceite vegetal
- 1 taza de tortillas de maíz en tiritas
- 1/2 taza de chile ancho en finas tiras
- suficiente crema ácida
- suficiente queso fresco desmoronado
- suficiente aguacate
1. Calienta un comal a fuego alto y asa la cebolla, el ajo, el jitomate. Retira.
2. Licúa los ingredientes que asaste con anterioridad con los frijoles, el caldo de frijol, el chile pasilla, el caldo de pollo, el laurel, el tomillo y la mejorana hasta obtener una mezcla homogénea.
3. Calienta una sartén con un poco de aceite y cocina la preparación anterior hasta que esté cocida.
4. Calienta un sartén a fuego medio con el aceite, fríe las julianas de tortilla hasta que estén crujientes, retira del aceite y coloca en papel absorbente.
5. Fríe las tiras de chile ancho sin que se quemen, repite el mismo proceso y reserva.
6. Sirve la sopa, acompaña con la crema ácida, las tiras de tortilla frita, el chile ancho frito, el queso fresco y aguacate. Disfruta.

My go-to meal! Rice, whole pinto beans, and tacos with whatever ingredients that I have. Sometimes I do tofu and cumin tacos, or lentil tacos, or fajitas, or jackfruit, or soyrizo, potato, etc. I could probably feed 10 people with $5 of these ingredients. 🙌🏽 I'll put some similar recipes in my stories. ♥️ What's your favorite veg taco filling?
