“Kao” means rice and “Chae” means soaking. Kao Chae is cold rice served in the hot days of summer. This dish has an influence from the “Mon” or “Peguan” from the southern part of Burma. In Mon culture, they make Kao Chae during the Songkran festival and offer it to monks and the elderly to bring themselves the best of luck in the New Year. In Thailand, the creation of Kao Chae began with the royal family and was considered as a royal cuisine.

What gets you excited about the gin industry?
B - Watching the progression people are making when it comes to local brands, produce and flavours.
What is your favourite thing to create using Patient Wolf gin?
B - I’d say a Martini. It’s one of the greatest ways to appreciate a well-balanced gin.
Is there anything new and exciting you are working on at the moment?
B - At the distillery we’re constantly bringing bar teams and chefs out to see the space. When we’re there we break out our test still and see what kind of amazing, intriguing and sometimes just plain unusual flavours venues can put together. I’ve distilled everything from snow peas to camembert, and I’m very excited to see what the team from Pilgrim put together.
If you weren't working with Patient Wolf, what would you be doing?
B - I’m lucky enough to help manage a cocktail bar and jazz club in the city called Jasper’s, right on Goldie Place. Once the admin is done it's always great relaxing with a Negroni and watching the bands.
Are there any other countries that influence your Aussie product?
B - Last year I went over to Europe to compete in a cocktail competition. Whilst we were there the team from the Glendalough distillery took us into an incredible valley. We went picking sloe berries with their professional forager, which sparked a huge passion that was passed into our limited-edition sloe gin.

Ok so this cheesecake is on another level! Our good friends at Woolworths created this cheesecake and we here at Altimate decided that we would give it a go - WHY? I here you ask - Well they have used our Waffle Cones crushed them into pieces added melted butter and used this as their cheesecake base! What a WONDERFUL idea - Thank you @woolworths_au. 🙌. What you’ll need ~
1 x Thin Scotch Fillet Steak
(Grill Steak for approx 2-3 minutes a side on a hot grill for medium).
(In some countries they’re ribeye) @pitbrobbq Peri Peri Rub
(Used on steak and fries)
2 x Slices of thick Sourdough Bread and butter one side. That side goes down on the grill first. (I buy a loaf & slice it at home)
Buttery (and yummy)onions (Sliced red onion, sautéd gently in butter/oil until soft.)
Tomato Sauce (Ketchup)
LEST WE FORGOT: Nothing like baking a batch of homemade ANZAC biscuits to get into the ANZAC spirit. We went a little unconventional yesterday, substituting half of the required golden syrup for @abshoneyau ginger honey. What’s the verdict? Delicious!

Found burger heaven, and it's in Scoresby 😍😍🍔 // asked to try out this cute burger joint and couldn't resist going past the Stanley "burger with the lot" 😂 crunchy as fried chicken, beef and bacon, egg, cheese and the chefs "secret sauce" - a combination of 5 different sauces that I couldn't begin to guess. But all I can say is altogether.. Amazing! Peppery and somehow Asian feeling as well, topped with onion rings. Thanks for the feed @stanley.burgers!
