The most amazing steak i've ever had: 'thin skirt'...man, off the hook tasty. Riddled with big streaks of fat running all through, in and between those meaty fibres, it all just melted away after a few minutes over a really hot fire. You can see it all dripping out of this bite im about to enjoy the shit out of. Amaze, im in love😍

Depending on what ur cooking on youll have to cut a few times with the grain, then long strips against the grain for tenderness. This bite is taken back the other way and shows all the delicious juicy fatty layers😋

First meal in Hawaii was at a dope little food court! Shirokiya Japan Village Walk located inside Ala Moana mall, had tons of different Japanese food stall options! I opted to check out Gourmet Plaza, and their wagyu katsu!

Ok really tho - what an amazing looking strip of beef. Its the costal muscle of the diaphragm and considered offal but let me say, this turned out to be the most tasty, flavoursome, tender, juicy bit of steak I've ever had in my whole life....how does one cut get such an advantage over the rest?
