My first empty cup of keto vanilla mug cake.....because I ate it!
I added Lily’s chocolate & made some homemade whipped cream with heavy whipping cream. It’s a good treat when you’re craving something sweet during that month😉. Most times I don’t want sweets yet this hit the spot.
Low Carb Mug Cakes
Time Cook: 2 minutes
Time Total: 2 minutes
Time: 4 minutes
Servings Calories: 1 cake 387 kcal
3 tbsp Almond Flour
1/4 tsp Baking powder
1/8 tsp Pink Salt
2 tbsp erythritol
1/2 tsp vanilla extract
1/2 tbsp Butter
1 large Egg
1/2 tbsp sour cream
1/4 tsp ground cinnamon
1. Combine almond flour, baking powder, salt, erythritol, vanilla and melted butter well.
2. Add egg and combine well.
3. Add sour cream and combine well.
4. Pour into mug or ramekin and microwave for 90 seconds. Keep an eye on it for when it rises too high.
5. Tip: If it rises high (over the rim) open the microwave door, let it deflate before finishing out the 90 seconds.

I'm learning a hard lesson right at this moment that just because I am ready, it doesn't mean that life won't take over control and throw a curveball at me. Being one always in control is difficult. My Friday is tomorrow though 😊
Wow I had some serious doubt about this dinner right here ⬆️ I am NOT a fan of veggie noodles usually, plus on this challenge I'm not allowed carrots or any type of squash or gourd so when the bf asked if we could have spaghetti night I was like 🤷 So I googled wth can I spiralize that's not squash? And boom, celery root came up. It was on super special at that farmer's market I went to this week so I said what the hell I'll try it out. I was expecting it to taste horrible like all other veggie noodles (telling yah, really not a fan), especially with that unique smell it has lol but OMG it was super good! I was so happily surprised! It’s been cold and rainy ALL WEEK here so I finally got my crock pot out and made #lowcarb taco soup. So good and so easy! A cold night, soup, and Hocus Pocus. Sounds like a perfect night to me!! 😁
Pepperoni, bacon & mushroom pizza 🍕 I think they call this ‘Canadian’ pizza. This was the hubs request tonight ✨ I tried something new with the pepperoni by baking it a little first to get that extra crisp. It got rave reviews 😁☺️What’s your favourite pizza topping??
Here’s an easy quick side dish I like to throw together to go with any protein for a quick dinner. Cauliflower rice with Kerry gold butter, parmesan, and seasoning. I’m loving this house seasoning from @tinylittlechef 🎉It’s the perfect combo of salt, pepper, and garlic flavor all in one, and it’s powdered so it packs a punch and doesn’t taste gritty!

I've been wanting to make these for a LONG time now! Years ago I found a Copycat recipe for this on the internet, and I don't remember where I got it from. Anyway, I ketofied it... and the code has been cracked!! This makes 6 rolls, or 7 if you make them smaller, but you'll have to use a 3rd of another cut da carb sheet.
2 Sheets @cutdacarb, cut each sheet into 3rds
2 large Avocados
2TB. sun-dried tomatoes packed in oil, diced
2 tsp. chopped fresh cilantro
1/4 tsp. salt
1 egg, beaten and set aside
Coconut oil for frying
1/4 tsp. white vinegar
1 tsp. balsamic vinegar
1/4 cup Sugar Free vanilla syrup
1/4 cup Sugar Free Maple Vanilla syrup
1 pinch powdered saffron
1/2 cup chopped cashews
2/3 cup fresh cilantro
2 cloves garlic
1-2 TB @lakantosweetener Monkfruit (Golden) sugar substitute, or Erythritol
1 tsp. pepper
1 tsp. ground cumin
1/4 cup olive oil
1. In a bowl, stir together vinegars, & both Choczero syrups, and saffron. Heat for one minute in the microwave.
2. Puree this mixture in a blender adding cashews, 2/3 cup cilantro, garlic, monkfruit golden, pepper and cumin. Pour into a bowl & whisk in oil. Stir and refrigerate.
3. In a bowl, stir together avocado, tomatoes, 2 tsp. cilantro and salt. Divide mixture into 6 equal parts.
4. Put a scoop of the mixture into each cut da carb slice. Brush the end with egg. Roll up like little burritos from the bottom, sealing with egg and repeat with the remaining sheets.
Fry egg rolls until golden brown on ALL sides, watching carefully so that they don't burn.
5. Serve with dipping sauce.
Before this weight loss journey, I only had smiles that big when I was either 1) drunk or 2) watching my daughter do something cute. Now I’m genuinely happy 95% of the time. The other 5% I can blame on woman hormones or my husband 😂😂 (kidding babe! Kind of.....😂😂😘) I’ve never been a huge drinker. Maybe once a month? It’s always just socially & I NEVER get drunk drunk anymore, because have you ever had to MOM with a hangover?!?! It.is.the.WORST! Made that mistake 2 times & never will again 😂😅 It feels so good to have this smile nearly all of the time now.
