Yesterday was #nationaldessertday and we celebrated with these bomb homemade cookies that my daughter made. .
Gluten free ✔
Soy free ✔
Corn free ✔
Half the sugar ✔
Tree nut free ✔
And they still tasted good ✔
We were able to use @namastefoodsllc flour for an exact replacement for regular flour, allergy friendly dark chocolate chips and @dollopgourmet frosting which is soy free and half the sugar. They were so delicious and we were able to freeze leftovers for another weekend splurge! It may sound silly but it's these little luxuries of easy to make allergy friendly and healthier options that have put basic baking back on the menu for us and we are so grateful!

Conner was the first one to use our new Vitamix tonight! 🙌 We’ve been thinking about getting a new one for awhile with the new accessories (the small bowl to make nut butters and the cup for smoothies on the go). Costco had a road show going on this weekend that ended today, so we wanted to get over there to get one...but I didn’t realize the Vitamix they were selling had some sort of Bluetooth-like features going on. 🙄 I said no to that one, because I think there’s enough “Bluetooth” in the world 😜 and I’m not interested in having more in the house or near my food. So we went with the classic base and got the accessories separately. I’m a little sad about letting go of my 15-year old Vitamix that’s been so good to us (and has lived in 8 homes with us!) but happily I have found the perfect new home for it. 😉💚 Conner used the new one tonight to blend frozen strawberries & cherries with lemon balm tea + local raw honey and then poured the mixture into Zoku molds to make popsicles. A nice healing cleanse dessert. 😋
I love that my hubby and kids are willing to try new things, and even tell me they'll drink it if they don't like it, because they know it's good for them. I try to make it taste yummy always, but today's juice is more for healing with celery, cucumber, lemon and lime...which I don't mind at all.
Mike even said to me with the last batch, that he remembers trying my green smoothies in the beginning of our journey for better health, and he thought they tasted like dirt and couldn't understand how I drank them 😂. Taste buds change! He now thinks they're pretty good now!

Yummy Italian Potatoes! 🥔🍅🍃 I wanted to make a quick dinner tonight and also use up the leftover sauces we had in the fridge. I put red potatoes into the Instant Pot for 5 minutes, then prepped a couple salads. I put the cooked potatoes on top of raw spinach, then sprinkled the potatoes with Italian spices & red pepper flakes, then “zero” minute Instant Pot green beans (I had frozen organic beans in the freezer, so I used those)...sprinkled a little pink salt onto the beans, then topped with sliced sweet peppers, raw marinara + lots of fresh basil.
