There's the classic combination of Halwa-Kheer-Poori with a side of Saatvik Aloo Gobi & Meethe Methi Tamatar (A Simple Sweet & Salty & Tangy & Spicy Tomato Sabzi with Fenugreek Leaves - It is a great balance of all tastes - RECIPE BELOW
Recipe for Meethe Methi Tamatar:
Chopped Tomatoes - 5 medium
Chopped Methi (Fenugreek) Leaves - 2 cups
Grated Ginger - 2 Tbsp
Slit Green Chillies - 2 / to taste
Ghee/Oil - 2 Tbsp
Cumin / Mustard seeds - 1 tsp
Turmeric - 1/2 tsp
Hing - a pinch
Sugar/Jaggery - 5 Tbsp / to taste
Rock Salt - to taste
-Heat ghee in a pan. Crackle mustard seeds followed by hing and turmeric. -Then stir in the ginger and green chillies.
-Now add the tomatoes and stir well.
-Now add salt and a few splashes of water and cover and cook on medium or low, for about 7-10 minutes, stirring in between and adding more splashes of water if need be, till the tomatoes are softer but still retain some shape. -Don't let them turn to mush.
-Now stir in the chopped methi leaves and cover and cook for a few more minutes.
-Now add the sugar/jaggery and mix well and continue to cook for 3-5 minutes till it's all well mixed and there isn't excess water. -Serve with poori, roti, phulka or rice.
