Chocolate lava mug cake. I had a late lunch of steak & zucchini and wanted a treat to end my day with. I made this in the microwave. The mug cake probably is better from the oven, but I wanted it quick. I also added a little bit of stevia which I feel balances out the cooling sensation of Erythitol. One of my goals for this month was to try to limit my meals out to once a week. Wellllll, obviously I haven’t met that goal. 😂 I’ve been feeling very tired and a little under the weather, so I’ve been getting most of my meals from fast food places the last week or so. @chipotle really came through. Is there anything better than a dude at Chipotle who’s heavy handed with the chicken?
My order is pretty much always the same: burrito bowl with fajita veggies, double chicken (I always wait to tell them I want double until after they do the first scoop so they don’t skimp 😉), sour cream, cheese, side of guac (you usually get more guac if you get it in a container on the side).

Keto Day 91: Scrambled eggs with rotisserie chicken again 🍗 🍳 Hubby liked it so much there was a repeat request 😋 this time I used @franksredhot, sharp cheddar and some freeze-dried shallots ~ buffalo eggs are 👍 Side of @grassrootscoop pastured pork sausage links 🤤 so good I had to go back for another one. 😶
Mozza sticks... need I say more?
This was another creation for last weekend and from what the guys said a huge success. I used unflavored whey, eggs and @porkpanko for the breading, seasoned with a little Italian seasoning. ⠀⠀
6 mozzarella cheese sticks, cut in half
@porkpanko “bread” crumbs or pork rinds crushed up
Low carb pizza sauce
Avocado or coconut oil for frying
Stick the cheese sticks in the freezer for 1 hr.
Create a breading station with whey in the first bowl, the egg in the second and bread crumbs/Italian seasoning in the last.
Remove the cheese sticks from the freezer and start the dredging process. I always keep one hand for dry and one hand for wet. Try to do this quickly as you want the cheese to stay frozen.
Heat oil in a pan over medium/high heat, you want it hot enough to cook the breading quickly and not melt all the cheese out, but not too hot that they burn.
Cook until brown and crispy. Serve immediately with warmed up pizza sauce.
So here it is... my #weightloss progression. I kept going back and forth on whether I should post this or not. You see, my focus is HEALTH. To regulate my blood sugar, heal my fatty liver, reverse (or put in remission) my diabetes, and increase energy among other things. All of that is improved by weight loss, yes, but I don't want that to be the sole focus. •
I didn't weigh myself for a while when I started this. I just figured the changes I was making would show. Then I weighed myself and saw the improvement and I thought, "You just need to change your thought process on this!" There will be ups and downs on the scale but I don't worry about it too much. I knew I was getting somewhere positive with my thoughts when I didn't get upset that I gained weight or had a small weight loss. I figured it would work itself out and if I needed to make changes, I would. It's not perfect. •
I like seeing the changes on the scale. It's a tool for me. But it's because I'm working hard to change bad habits. It's easier to say yes to the carby treats. To get the instant gratification. To say fuck it. But I like challenging myself and knowing that I CAN change the norm.

Roasted Bacon Cranberry Brussels Sprouts 🥓 🤔How should I describe these? ..Oddly delightful—slightly tart of course. Cranberries are in abundance right now and this was a fun way to use them. .
1 pound of Brussels sprouts sliced, 4 slices bacon chopped, 1 cup fresh cranberries, 1/2 cup brown sugar substitute, 2 tablespoons avocado oil.
Spread the Brussels and cranberries on a sheet pan. Evenly sprinkle brown sugar sub, drizzle oil. use hands to toss and coat the sprouts and cranberries. Top with bacon.
Roast on 425 degrees for 25-30 minutes. 💛
* I used sukrin gold brown sugar sub but you can find a few other brands on amazon.
