Since starting #ketoliving I’ve tried to do #bulletproofcoffee but have not been able to because coffee is the main ingredient 😳- but yesterday I had a wild hair - bought unsweetened cold brew coffee and MADE THE DECISION👊🏽 I was going to drink it with my #perfectketones#mctoilpowder (it’s chocolate of course 😉) So I did - but because of the awful anticipation of the coffee taste I drowned it all in heavy whipping cream 😂😂 Not sure if it still counts as coffee, but i am SUPER pumped I am actually drinking it and the coffee aftertaste isn’t bad👏🏾👏🏾

Keto Pumpkin Pound Cake!
Mix all the ingredients well in a bowl and bake at 300 for 30-45 mins (or until toothpick test)
Feel free to play around with the flour, I ended up having to add some milk because it was too thick. Almond flour and coconut flour have very different textures so be patient and find out what works best for your recipe! Enjoy!

My mom has been using Pruvit since June and has lost 20lbs. She eats a Keto diet and drinks 2 Pruvit caffeine free OS Orange Dream drinks a day. She doesn’t workout, it’s all in what she consumes. She says she has more energy, focus and feels great! She’s also close to turning 70, but shhhhh, I didn’t say that! She says 39 and holding! 😉
Folks! Many of you know I'm extremely skeptical of packaged foods that claim to be "healthy." Over the next few weeks I'm going to be talking a lot about snack bars. It's something we should be talking about more as a health community.
The snack bar marketplace is overwhelming and like most aspects of the food industry… it’s a mess. Most bars on the market either have high sugar content, high net carbs, lots of sugar alcohols, use pro-inflammatory fillers and stabilizers, and do not support a ketogenic (or any other) diet. .
But it's not all doom and gloom... I'm going to get to try the new Perfect Keto Bar later this week. .
I'm always skeptical, but I'm also very excited about these. It took founder Dr. Anthony Gustin 14 iterations of tested the bars’ impact on his own blood glucose levels to ensure Keto Bars would minimize his own glycemic effect after consumption. .
Keto Bars are 19g of fat, 10g of protein from collagen, and 3g of net carbs.
And the main ingredients are:
Almond and cacao butter (not peanuts)
Coconut oil (for the MCT’s)
Collagen (for the soft-tissue recovery)
And a touch of sea salt and stevia
Sounds pretty dynamite to me.

I won't say I fell off the wagon, I will just say I was dragging along the side of it for a little😂 I had maybe one too many cheat meals a week and a not enough work out sessions, and got a little soft around the edges...but that's LIFE!
We are constantly changing, every second of every day we are changing and it is about learning to adapt and evolve to the world around us and the life we live that is going to bring balance and peace to our lives! I no longer beat myself up for "falling" or "slipping" when it comes to my health and fitness. I simply recognize that I am human, and it will happen from time to time and I just brush myself off and keep it moving!! Stop being your own worst critic, stop putting yourself down and feeling bad because you messed up, that's life and it will happen over and over again! Stumble through the hard times, smile at the good times and just enjoy the ride✌🏻

1 beef skirt steak or flank steak (1 pound)
1 teaspoon Montreal steak seasoning
2 tablespoons butter or coconut oil, divided
1 medium zucchini, halved lengthwise and cut into 1/4-inch slices
1 medium yellow summer squash, halved lengthwise and cut into 1/4-inch slices
1 medium sweet red pepper, chopped
5 ounces fresh baby spinach (about 6 cups)
1/2 teaspoon salt
1/4 teaspoon pepper
4 large Nellie’s Free Range Eggs
1/4 cup shredded Parmesan cheese
1. Rub steak with seasoning. Grill steak, covered, over medium-high heat or broil 3-4 in. from heat, 3-5 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand 5 minutes.
2. Meanwhile, in a large non-stick skillet heat 1 tablespoon butter over medium-high heat. Saute zucchini, squash and red pepper until crisp-tender, 5-7 minutes. Add spinach, salt and pepper; cook and stir until wilted, 2 minutes. Divide among four plates; keep warm.
3. In the same skillet, heat remaining butter. Break eggs, one at a time, into pan; reduce heat to low. Cook to desired doneness. Thinly slice steak across the grain; serve over vegetables. Top with egg and cheese.
Prep time: 5 min
Total time: 30 min
Net carbs: 7g

Sorry to anyone who has followed me for healthy recipes. I’m not in the stage or journey of actively trying to lose weight anymore so my diet isn’t as strict as it use to be so I’m definitely going to be sharing lots of different food here. Just an update/FYI 🤗
For the cheese sauce I used 1 can condensed cheese and mixed with a little bit of milk. Then added some shredded cheddar and let it all melt together.
I seasoned it with garlic and onion powder alone with creole seasoning.
Then added the green Chile ! I didn’t measure bc I just made this up as I went 😂
I baked the fries as according to the package. Topped with shredded cheddar then added the cheese sauce on top of that. The only thing I would’ve done different was use less chile because I used a hot pack and it was so hot 😅😅😅

What are some keto dinner food options?
Here are some simple and easy-to-prep keto dinners!
No this dosen't come with the carb loaded rice or noodles. To make it keto friendly substitute xantham gum for corn starch. Add broccoli on the side to finish your meal.
COCONUT CHICKEN TENDERS
Delicious chicken tenders made with cashew flour and unsweetened shredded coconut to keep it keto!
BAKED ITALIAN MEATBALLS
The meatballs are made with Italian herbs, and covered in a rich tomato sauce with a mozzarella topping. The dish is finished in the oven for a nice cheesy topping!
You can either grill salmon or bake it in the oven. Lemon, butter, and thyme are great additions for tremendous flavor. Add your favorite keto veggies on the side to finish the dish. A great source of potassium and B-Vitamins as well!
STEAK AND EGGS
Grill up a steak and make sure to finish it with butter! Fry some eggs to your preference to have on the side. Add sauteed spinach or broccoli to finish the plate.
BEEF AND BROCCOLI
Such a simple and underutilized keto dish. Beef and broccoli sauteed together in coconut oil makes for the perfect pairing!

Pic 5: I fast 17 hours a day and I track it. Don’t eat after 7pm and before noon the next day except on on my days off. Drinking a gallon of water a day and electrolytes in the morning helps me out so much. I also workout 4-5x a week. All of this has been accomplished in 10 weeks!!! I’ve been working so hard and I feel so good. Extremely proud of myself... Just out here living my best life 🙌🏽

KETO POUND CAKE INGREDIENTS:
1 1/2 Cup (125g) Super Fine Almond Flour
Heaping 1/2 Cup (100g) Confectioners Erythritol
1 Tsp Baking Powder
Just a pinch of salt
3 1/2 oz (100g) Full Fat Cream Cheese (room temperature
4 Tbsps (60g) Coconut oil
4 Large Eggs
1 Tsp Vanilla extract
Heaping 1/4 Cup (50g) Confectioners Erythritol
Heaping Tbsp (20g) Unsweetened almond milk
Pre-heat the oven to 350 Degrees.
Add all of the dry ingredients to a large bowl mix, combine, and set the bowl aside.
Add all of the wet ingredients to an even larger bowl, and use aa hand mixer to combine those ingredients.
Once the wet ingredients are combined, add the dry ingredients, and use the hand mixer to combine the wet and dry ingredients together.
When everything is incorporated into one another - and a batter has formed - pour the batter into a loaf pan lined with parchment paper, and coat the paper with baking spray.
Bake for around 40 minutes, or until the top is golden brown.
Let the loaf cool in the tray, and while it's cooling mix the glaze ingredients together in a small dish.
When the loaf has cooled completely, remove the loaf from the tray, and add the glaze to the top of the loaf.
Let the glaze set on top of the loaf, and once set, cut the loaf into 12 slices.
