Tonight for dinner: a concoction and it was AMAZING!
1 pound of cooked cubed steak 🥩
8 pieces of cooked bacon 🥓
1/2 Head of Broccoli 🥦
1/2 Head of Cauliflower
1/2 cup sour cream
1/2 cup mayonnaise
1 TBSP HWC
1/2 Package Toasted Onion powder mix
1 cup Sharp Cheddar Cheese 🧀
1 cup Colby Monterey Jack
What I did was baked the bacon @400* and pan fried the steak with salt and pepper to a medium rare. (Don’t worry, it will finish cooking in the oven). While that was cooking I cut the broccoli and the cauliflower into bit sized pieces and steamed them for both in the microwave for 4 minutes.
I also mixed the sour cream, mayonnaise, HWC and powder mix in a bowl.
Once the bacon and steak was done cooking, I mixed everything together except for the Colby Monterey Jack.
Put everything in to casserole dish and then I covered with the Monterey Jack Cheese then covered with foil and baked for 30 minutes. I probably could have baked for less being that everything was already cooked.
BUT this was AMAZING!!! YOU MUST MAKE THIS!

Holy moly was this delish! Totally winging it tonight, and I wanted a scampi and just threw this together. The best scampi I have ever made! And so super easy. I just cut up some butter and put in the bottom of the baking dish, added some fresh minced garlic, a splash of lemon juice, a splash of white wine. Then I layered some Trader Joe’s Argentinian shrimp on top and then seasoned with salt, pepper, Trader Joe’s garlic salt grinder and some @flavorgod Ranch seasoning and a little parsley. Baked at 425 degrees until the shrimp were done, about 12-15 minutes. That @flavorgod ranch seasoning made all the difference. So, so, so good! Ingredients for Crust
4 tablespoons butter (melted)
2 cups almond flour
2 tablespoons zero-calorie sweetener
Ingredients for Filling
16 oz cream cheese (bring to room temperature)
1/2 cup zero-calorie sweetener
2 teaspoons vanilla extract
2 eggs (bring to room temperature)
2 tablespoons fresh lemon (juice of)
Topping for Cheesecake
@waldenfarmsinternational zero-sugar caramel
@landolakesktchn sugar-free whipped cream
Bring the eggs and cream cheese to room temperature before use. Preheat oven to 350 degrees.
For the Crust:
Grease a 7-inch or 9-inch springform pan with butter. Combine the melted butter, almond flour, and sweetener in a medium bowl. Stir until mixed. Add the crust to a 7-inch or 9-inch springform pan making sure to work the crust up along the sides. Bake the crust for 5 minutes. Remove the pan from the oven.
For the Filling:
Add the cream cheese to a mixing bowl or standing mixer. Beat for 15 seconds on Low with a hand blender or standing mixer. Scoop it out with a silicone spoon. Add the sugar and then beat for 15 seconds on Low.
Add one egg. Beat for 15 seconds on Low. Add the second egg. Beat for 15 seconds on Low.
Add the lemon juice and vanilla extract. Beat for 15 seconds on Low.
Add the cheesecake batter to the crust. Bake the cheesecake for 30-35 minutes. Remove the cheesecake from the oven and set it out on a counter until it reaches room temperature.
Once cool, place in the refrigerator overnight (minimum of 5 hours).
Top with Caramel or sugar free whipped cream
#Keto Day 4 - Lunch
So the husband has gone for three weeks (having a blast on the snowfields of Japan...) while I deal with the baby on my own. In preparation for the one on one battle after work, I've ordered a few ready made keto meals delivered to our door to help make dinner time less stressful and keep me on track. Also, I wanted to try and see if these prepared meals taste any good... so the verdict is, servings appear and are quite small, the appearance not that appealing but flavour and taste isn't bad at all. Having said that it's difficult to stuff up this dish. I bought this one to work for lunch and an extra tub of cauliflower to fill me up. I like how they have worked out the macros for me on the labelling and I look forward to trying out the rest of my meals in my fridge! This gives me some good ideas for keto meal prep when the husband returns.

Cooking spray, for pan
1/2 c. almond flour
1/2 c. coconut flour
1/4 c. shredded coconut
1/2 c. (1 stick) butter, melted
3 (8-oz.) blocks cream cheese, softened to room temperature
16 oz. sour cream, at room temperature
1 tbsp. Stevia
2 tsp. pure vanilla extract
3 large eggs, at room temperature
sliced strawberries, for serving
Preheat oven to 300°. Grease an 8 or 9-inch springform pan, and cover the bottom and edges with foil. In a medium bowl, mix together the flours, coconut, and butter. Press the crust into the bottom and a little up the sides of the prepared pan. Place the pan in the fridge while you make the filling.
In a large bowl, beat the cream cheese and sour cream together, then beat in the stevia and vanilla. Add the eggs one at a time, mixing after each addition. Spread the filling evenly over the crust.
Place pan in a water bath, then bake for 1 hour to 1 hour 20 minutes, until it only slightly jiggles in the center. Turn oven off, but leave the cake in the oven with the door slightly ajar to cool slowly for an hour.
Remove pan from water bath and take off foil then let chill in the fridge for at least five hours or overnight. Slice and garnish with strawberries.
