16) FTF on a Saturday. Left is today ⬇️28 #, right is in May at my 50th🎂 And let me just say I don’t do “cheats”. At the party they served chili and ham & bean soup with cornbread plus numerous apps. Although it’s frustrating those damn little beans prevented me from enjoying either, I found some yummy summer sausage and pepper jack cheese, celery, and cheeseball 😜

Keto tacos anyone?! You’ll love this easy recipe! Just melt 2 cups of mozzarella cheese, and add 3/4 cup of almond flour and 1/2 tsp of sea salt! Mix until dough forms. Then divide into 5 pieces, roll each piece in a ball, flatten on a piece of parchment paper, place a piece of parchment paper over the dough and roll out! You’ll bake on 375 degrees for about 7 minutes. To form the taco shell, put tortilla shells over rolling pin. Chicken crust pizza with sauce, spinach, mushrooms, peppers and mozzarella. Yum!
Mix 1 lb ground chicken or turkey, 1 egg and 1/2 cup parm. Lay on parchment on cooking tray as thin as possible and bake 15 @ 450. Add toppings and bake 10.

Road trip lunch! Stopped at @chipotle and got a burrito bowl. I got double meat, but it was pretty skimpy. More like regular meat. I got Chicken and Carnitas, fajita veggies, mild salsa, cheese, and a side of guac! For the entire thing it was 10g net carbs! I mostly ate the meat since there were a ton of veggies and once the meat was gone I didn’t want to eat the veggies alone. So I’d guess I ate way less carbs than that.

After I posted my last photo I had a few of you comment and message me about you not seeing loose skin. I immediately pulled my pants down (I usually tuck it in) and snapped a photo. I don't post a lot about loose skin because I feel like it's off putting to some. There are people that are afraid of having it and there are people that don't think it's worth the hard work to be left with skin. As you can see, I absolutely have it. When I stand it stretches out and looks smoother and doesn't hang. When I'm sitting it's a different story. I'm posting this because I would put the same amount of work if not more to be sitting here today with this wrinkly flap of belly. I've worked EXTREMELY hard and I STILL have it. I've lost over 100lbs, I exercise almost every day since the beginning, I'm on track with my macros and I still didn't avoid it. My body has been obese my whole life. It went through 2 beautiful pregnancies and it has lead me to this point. I will be getting rid of it at some point not to make myself feel better but simply because I feel I deserve to finish what I started. So for everyone that asked, here it is. Worth every squat, burpee, plank and crunch!
Day 270: down 176 lbs and killing it!!! Love this keto way of life!! I just wish I knew about this years ago before I let myself go to the point of almost 500lbs at my heaviest. It’s been the best thing I’ve done for myself!!! Regaining my life and independence has brightened my outlook on life. I use to just sit in a chair watching other people live life. Now I get to LIVE LIFE!!!! I still have a long way to go but I’m doing it and so can you!! Just make the first step...it’s a hard one and I know the struggle. I went from eating fast food 3 times a day 5,000-6,000 calories so I know the struggle. I always thought I couldn’t do it...but I’m am here today inspiring others and living a better more fulfilling life than I have in the last 10+ years. I’m down to my high school weight my junior year and it feels so good. When I started this journey in February I would have never thought I would be here today. I felt so hopeless, helpless, and on the brink of death. My kidneys were shutting down, my heart was having a hard time and always hurt, I was on multiple medications, I couldn’t breath, I could barely walk, I couldn’t shop for myself, I relied heavily on others for simple task around the house, I couldn’t play with my daughter like I wanted to. Now I do everything for myself and rely on no one, I chase my daughter around and can run, I can breath, I shop for my food daily on my own, I cook, I clean, I have more energy than I can remember!!! All thanks to a chance I decided to take back in February. Today is your day...get started and persevere!!! If I can do it you can do it!!
