Google says that 30-40 percent of food gets wasted in US, and Google says that's not good... and Google is smart as shhh...So we should probably try to make this #leftoversmonday a thing. So on top is my lunch I brought to work. Baby kale, arugula, brocolli sprouts, Cherry tomatoes, blue cheese, a whole avacado, chopped up leftover pot roast and always olive oil only from Greece! Then for dinner I searched the fridge and scrounged up what was going bad. I saw three hard boiled and had a "devilish" idea. I took the yokes, avacado mayo, yellow mustard, some left over ground beef, some border line shredded cheese, and mashed that up. Then like a surgeon I put that concoction on the egg whites. I place a piece of cilantro on each egg because I'm pretentious. Then I place a slice of jalapeno topped ever so slightly with sour cream on each peppa! I only do this to three of the six cause I don't want to be excessive, but mostly because I can't handle that spice. Of course I sprinkle smoked paprika to top them off instead of regular paprika because I'm not a degenerate! Then I compliment it with a side spinach salad with cherry tomatoes soon to go bad, some goat cheese, and the rest of the container of sprouts. And just cause I was feeling like boss I had a hot cup of organic bone broth...boom! Leftover salmon with pesto sauce & green beans tonight for dinner! Heated up some super easy @alexiafoods cauliflower mash & this was ready in 10! 👍🏻 #leftoversforthewin
Dirty caulirice. It’s an adaptation of an easy meal I used to make pre-Keto. Neither is truly dirty because I don’t use offal, but I call them dirty because the rice is cooked with the meat (in this case cauliflower rice).
1 lb ground beef.
1 package polish or smoked sausage chopped.
1 package andouille sausage chopped.
1 yellow onion chopped (optional) .
2 packages frozen cauliflower rice Cajun seasoning blend of your choice.
Grated cheddar cheese (optional) Directions:
1: In a large high sides skillet or Dutch oven over medium high heat, caramelize sausages to desired brownness. I like em with nice crispy edges. Remove and set aside.
2: Brown ground beef. Add Cajun seasoning to taste. I use Tony Chachere’s because it’s my hub’s favorite. I don’t over do it because that seasoning is salty, and I like to leave it up to folks to season to taste at the end.
3: Once beef is mostly browned, add onions and cook until starting to soften.
4: Put sausages back in the skillet and add the cauliflower. Stir, cover, reduce heat to medium low, and cook for 25 minutes.
4: Serve topped with grated cheese. Avocado is good too.
This stuff is a huge hit at my house and my oldest and I fight over the leftovers.
Just kidding. I get the leftovers. 😂.

Ended 18 hours of fasting at 10:30am with these leftovers today. Yum! It was half of the container of leftovers. So far today, I’ve had coffee with NutPods, this plate, and a single waffle serving (just posted them). A good comfort food sort of day. I’ll have the other half of the leftovers from this meal a little later today. Yum! #ketoleftovers
Coconut Curry Chicken Soup 🌴🍛🍗
4 tbsp of coconut oil
2 cloves minced garlic
1/2 white onion (chopped)
2 lbs chicken thighs or breasts
6oz of Bella mushrooms (or any mushrooms really)
6oz of celery (chopped)
4-6tbsp mild curry paste
2 cans of coconut milk (solids only)
4 cups chicken broth.
Salt and pepper to taste..
The above ingredients are what I did. I'm a firm believer that soups are great for tossing whatever you have in the fridge. Feel free to experiment!
1. Melt coconut oil in large pot. Add in garlic and onion. Simmer for 3-5 mins. .
2. Rough chop chicken into bite size peices. Add to pot and thoroughly cook tough..
3. Add in celery, mushrooms, and curry paste. Start with 4 tbsp. Add in additional tablespoons later if you need more flavor. Stir to coat everything..
4. Add in coconut milk, and chicken stock. Cook on medium heat until veggies are cooked through and soft. Add in additional curry at this time if necessary. Salt and pepper as needed. .
Oh it's been a day already 🤦♀️ broke a bottle nipple while washing it (of course one I cant get in town or even at walmart only online) and the only bottle brush we have broke too. Instead of that setting my tone for the day I made myself a delicious full breakfast to get the day started over. Leftover cornbread from chili last night topped with leftover sausage gravy from Sunday, an over easy egg, and 4 strips of bacon (cause that's what was in the fridge and I didnt wanna make 2 slices feel left behind 😆). Happy Tuesday, everyone! Leftover keto brunch Bratwurst cheesy and creamy scrambled eggs, homemade bacon lardons, homemade fathead dough bagels and cream cheese it literally bet me I had some leftovers although our dogs didn't complain, lol. Next up we have leftover beef and chorizo @crockpot using my slow cooker, inspiration @ketoginja love love love your channel thanks for the inspiration and all your motivational support you and your hubby gives to your followers its much appreciated! With this chilli we had some steamed tenderstem broccoli with some peppery salad and grated mozzarella and ofc some raw Almonds @buywholefoodsonline Then the last fathead dough bagel I used as a burger bun for some burger patties we had made with shallots mozzarella and crispy bacon fried in bacon grease I had collected when I baked the bacon. Then last night's dinner I made in my @crockpot again we got some lamb fillet @tescofood around 500g for like 3 quid got a really good bargain as we love to be frugal and bargains are the key😊👍❤️
It was a nice lamb and spinach curry and instead of cauliflower rice as I have been sickening myself with it we picked up a bargain in @morrisons while picking up some odds and ends here some broccoli rice 50p for 500g and wow much better then topped it off with 1/2 an ounce of raw almonds again.
Today was eventful my son had a 1-2-1 with CAMHS hopefully only 1 more appointment and closer step to his diagnosis this mumma is so stressed so maybe in the new year we will have more information and with this have better support from school etc.
I have a scan on December 13th really scared and anxious about it as being on my meds and additional meds is making me really spacey and sick the feeling is not nice and the worry isn't either.
