1 Asparagus Bundle
Salt & Pepper
6 Slices Bacon
- Preheat the oven to 350 Degrees Line a sheet pan with parchment tin foil. - Place the trimmed asparagus on the prepared pan. Drizzle them with olive oil and season them with salt and pepper. Roll the asparagus back and forth on the pan to coat them evenly.
- Separate the asparagus spears into groups 6. Arrange the spears so that their tips are all facing the same direction.
- Wrap the center of each bundle with one strip of bacon. (The bacon should overlap itself.) - Place the bouquet of asparagus on the sheet pan with the tail of the bacon on the bottom. (This will keep the bundle stay nice and tight while the asparagus is cooking and prevent the bacon from curling up while roasting.) - Bake for about 20 minutes, or until the bacon has browned and the asparagus is tender. Broil for the last few minutes of cooking until the asparagus bundles are crispy.

Keto Zucchini Enchiladas🙌
These are made we ground beef but can easily be made with chicken and green enchilada sauce 💃
Recipe calls for .
•2 Tbls of oil of choice
•1 large onion chopped
•Salt and pepper •2 cloves of garlic minced
•1lbs of Ground beef or 3 cups of shredded chicken
•2 tsp chili powder or spices of choice to season ground beef like Knorr beef bouillon •1tsp cumin
•1 1/2 cups of red enchilada sauce (I make my own, but store bought can be used)
•4 large zucchini
•1 cup of cheddar cheese
•1 cup of Monterrey jack cheese
•Sour cream and cilantro to top off finished dish
Roll up, top with cheese and bake for 20 mins on 350°

Guys, these first two pics were taken by my 7 yr old while we were setting the table! 😍😭😍 Proud Mom moment! ❤️ As usual, this meal is on the meal plan, but not for tonight; it just SOUNDED good! Before Keto & until this day. I have NEVER made tamales. But I always enjoyed eating them! They are so yummy! I’ve seen so many different recipes on Instagram and decided to try this one. OH MY GOSH! Keto Masa/Dough INGREDIENTS:
25 ounces Pork Rinds
1 Cup Baby Corn
1 Cup Ricotta Cheese
½ Cup Lard
½ Tbsp Baking Powder
1. Ground pork rinds in a food processor until super fine.
2. Blend baby corn in a food processor until it is in small pieces.
3. Pour both pork rinds and baby corn in a stand mixer. Add in all the other ingredients.
4. Mix all ingredients until well combined like dough.
For this type of masa/dough, steam for 25 minutes or manual pressure cook in instant pot for 15 minutes and natural release. (Use your favorite filling – Pork, Chicken, Cheese/Pepper, etc.)

1/2 cup almond flour
1/4 cup cocoa powder
3/4 cup erythritol
1/2 tsp baking powder
1 tablespoon instant coffee optional
10 tablespoons butter 1/2 cup + 2 Tblsp
2 oz dark chocolate
2 eggs at room temperature
½ teaspoon vanilla extract optional
Preheat oven to 350 degrees F (175 degrees C). Line an 8x8 inch or 8x9 pan with parchment paper, aluminum foil or grease with butter.
In a medium mixing bowl, whisk almond flour, cocoa powder, baking powder, erythritol, and instant coffee. Be sure to whisk out all the clumps from the erythritol.
In a large microwave-safe mixing bowl, Melt butter and chocolate for 30 seconds to 1 minute or until just melted. Whisk in the eggs and vanilla then gently whisk in the dry ingredients just until mixed through. Be careful not to over mix the batter or it will become cakey.
Transfer batter into pan and bake for 20-22 minutes or until a toothpick inserted comes out moist. cool for at least 30 mins to 1 hour and slice into 16 small squares.

Do not overbake the batter. If the batter looks jiggly, remove it from the oven after 25 minutes and it will set at room temperature. It is normal to see butter pooling on top the brownies.

My name is Abby (Abigail but that’s only for official things 😊). My amazing husband, Michael (Mike) and I serve God and raise our family together in Howard County, Maryland. We have a 9 yr old daughter, Penelope Gabbriella and 3yr old son, Huxley Steele. .
I’ve been on diets practically all my life and have always struggled with my weight. I found Keto with the help of my awesome trainer who recommended I give it a try. I nervously dove in after 6 weeks of research and vowed to only do it for 6 weeks. Here I am 130 pounds lighter and I’ve never looked back. .
Prior to the switch I was eating a typical high protein, lowish carb and low fat diet. Encouraged to eat 6 small meals a day, taking preworkout supplements to have enough energy for my workouts and constantly hungry.
I feel best when I combine Keto with fasting. I currently eat one meal a day when I’m not doing extended water fast. My longest fast to date is 14 days of water only. No food, no supplements, no electrolytes, coffee, tea, ACV, lemon, lime, coconut or maple syrup.
My husband started Keto a few months after I did and has lost 42lbs. He does NOT fast! I need someone to test all these recipes! .
We switched our children in June 2018 when we moved to a new home and left behind every sugar filled item. Our home has never had any non keto friendly foods in it. Everything in our house is complimentary to this lifestyle. .
We have seen improvements in behavior, speech, and temperament in both our children.
We are the parents, we make the rules, and don’t let the opinions of others make us feel guilty for wanting a better life for our family.
