Reheated the mini paleo banana pancakes I made last weekend for a quick and easy breakfast before dashing out the door this morning 🏃♀️. 🥳🎉HURRAY!!!🎉🥳It is almost 8 months since I started my weightloss journey and today I have exactly reached my goal weight. Of course I am proud of myself, but also of the support I received from my dear family, friends but also from you here! 🙏🏻Your relentless support means a lot to me. Does the trip stop? Never! This lifestyle now feels so good. So the adventure continues and secretly I would still want to lose 1-2 kilos on the way😂 Both physically and mentally I have never felt so comfortable before♥️

Basic salad with avocado cubes, boiled eggs, baby lettuce, chop leaves which seemed like baby spinach and a Cesar type dressing.
Personally I love salads so I did have this twice, very soon you will find out why.

It is what the name says. Half a bell pepper, marinara sauce (tasted a little sweet), meats laid over the sauce, cheese over the top and baked. The bell pepper wasn’t seasoned as it was a little sour and the sauce was sweet. Not a good mix. 2 out of 5
- Grilled Shrimp with Lavender Lime Sauce
These were nice but to be honest, tasted like lemon-buttered shrimp but under seasoned. I couldn’t taste the lavender at all.

- Baked Avocado Bowl
A great breakfast for anyone, be it keto or not. So this was half an avocado, seed removed, egg in the center and a couple of salami pieces on top. My egg was under cooked so I picked another and the egg was fine in the second one but the avocado was burnt on the sides.

So far, my Favorite dish in the whole buffet. Soft texture, homely taste and the feta just added to the mix of flavors.

Hopefully more liquids and some raw garlic will make my sore throat go away. 😩 #Teeccino is so delicious I know I will drink the full pot of tea! Haha yes it’s that great! Add a splash of a vegan milk and you’ve got the flavor of coffee. With a touch of caramel and heaven. -
I’m not sure why I’m sick. I looked up sore throat in the Country Almanac if Home Remedies. I’m eating most all of the foods they say to eat. Maybe I’m not sleeping enough. I though 6-7 hours was enough but maybe not for me. They said that the throat represent speech and a sore throat could mean you’re holding something in like anger. Or your body is trying to tell you something. Maybe you’re overspent and Body is making damn sure it gets some rest. Take care of yourself and listen to Body. He/she is always right! - Cheesy Broccoli with Ground Beef
The beef was well seasoned and the broccoli still had a crunch to it, the way I like it! However, the beef still have a lot of juice at the bottom which made this dish water when served on your plate. The cheese, or rather cheese sauce was a bit thin too.

This was health on plate. The zucchini was cooked just right and the sauce was tasty as well (even though the sauce was watery and thin). The cheddar cheese over the top added to the flavor.

I love a good butter chicken any day of the week. Overall taste was just sweet. I don’t know why but I could not taste the paprika OR the olives. The chicken was dry, slow clearly over cooked. Butter Chicken isn’t a dish to slow cook. I was disappointed.

This is me and Mum making bread! Vegan/Anti-Candida-style! It’s super easy. The recipe is adopted from @christinesalus and it turned out wonderful! I didn’t have any baking powder on hand and I had a different baking dish but I nailed it. It’s BREAD !!!!! Like a gift from heaven above!!!! Thank you @christinesalus for being the genius you are !!! 🤤🤪😄 recipe below! (It’s 3 ingredients) 🧐🤩 -
1. Soak 1.5 cups of buckwheat groats in a bunch of water for a few hours.
2. After soaking, rinse thoroughly in strainer and set aside. Preheat oven to 330*F.
3. Soak 1/4 chia seeds in 1 cup water for 15-20 minutes.
4. Process the buckwheat in food processor until smooth but a little clumpy.
5. Add chia seeds, 1 tsp baking soda, and 1/2 tsp sea salt. Pulse until smooth but a little clumpy.
6. Oil a baking dish with olive oil and make a layer of sliced almonds on the bottom (to prevent sticking). 7. Pour in dough. Bake 1 hour 15 minutes. Let cool 1-2 hours before slicing (if you can wait. Which we couldn’t.)
8. *if you are using a shallow baking dish, you might want to bake it 40 minutes and check it. It should smell toasty when done.
