I want to thank everyone for all the thoughts and prayers as I’ve been struggling with my hearing 💜 It has been 4 weeks since I woke with up sudden, profound sensorineural hearing loss in my right ear. I’m getting treatment for this which seems to be helping. My ability to hear conversations has greatly improved which I’m truly grateful for. But recovery is slow and I’m not getting all ranges of my hearing back. I seriously had to change my expectation that I would just go to bed one night and wake up with my hearing restored 😩 Boy, am I learning a new appreciation of GOOD THINGS TAKE TIME!!! I just keep repeating this to myself, over and over 👍 Honestly, I can deal with the hearing loss but it’s come with this awful ringing and noise sensitivity that makes day to day life very difficult. I do not have a quiet life. I don’t want to be that person that gets frustrated with the 👶 or 🐶 for making too much noise 😢 I’m hoping as more hearing comes back the ringing will go away. Doctor also mentioned that hearing aid might help the ringing so 🤞I’m having 2 more steroid injections in the ear and I’m going to see neurologist as well. Will keep y’all updated. And I seriously thank y’all for all the support and well wishes. I’m so fortunate to have so many fantastic people in my life ❤️
#keto...sooo lets just talk about this cauliflower mashed...tried it again and it was on POINT tonight!! YOU NEED TO TRY IT!!! .
1. Cut cauliflower florest and boil with salt and 2 garlic cloves.
2. Strain and then place in food processor with ingredients: 2 large tbsp of butter, 2tbsp of sour cream, 1 cup of mozzarella, 1/2 cup of parmesan, 1/2 cup of cheddar, salt, pepper, and garlic powder to taste.
3. Set oven to 380 degrees for 10 min and.. Place in oven with more shredded cheddar cheese and top with sprinkled 1 tbsp of Panko
So mushroom noodles are evidently a thing? I did a bunch of things and then suddenly had a pretty decent shrimp ramen kinda deal in front of me. I'll chalk that one up as a very unexpected win. #keto#ketofood#keto

Tidbit about working for an automaker, you always work a shit ton of Saturdays in Nov & Dec to build as many cars as possible and get laid off for at least 2 weeks or more between Jan-Apr (our slow months) so it's hard to say no to the OT on a Saturday when you know you'll be off in the new year. Sooooo we meal prep for 6 days!

Chicken salad is what’s for dinner tonight.
- 1 can of chicken (I know, I know 😏)
-1 tablespoon of mayo -chopped celery - a pinch of onion powder
- a pinch of salt & pepper
Mix it all up and voila you’ve got chicken salad 😁
Oh, and this was enough for 2 servings
Coconut flour pancakes!
I wanted to try these as buns for my burger. They turned out pretty good, but it also made me realize that I dont miss bread all that much.
Mind you I plan to toast them in the morning for breakfast.

1 cup coconut milk
2/3 cups of coconut flour
1/4 tsp baking powder .
This is the basic recipe...fry in a bit of coconut oil after you’ve dropped a few blobs in your pan. Once they start to bubble-flip and cook another 2-3 minutes on the other side. .
You can get really creative with this base! Add cinnamon and vanilla, toss in some coconut flakes, or blueberries, what ever you fancy!! Enjoy!

So many people have said they have always admired how confident I am. Oh sis... I never used to be and physically I still struggle with it.
Im confident in my abilities as a parent, im confident in my abilities as a friend, im confident in the fact I can make you laugh on any day, im confident within my business and I’m confident in my ability to write a bitchy email that most definitely states “as per my last email”. Bloody Susan’s. I’m sure of who I am now and I’m confident within that. Turning 30 was the best time of my life. I entered my 30s with a clear idea of who I am however since I was 11 I’ve lacked confidence within my body and how I look. I spent my 20s with constant anxiety over who I am and always wanting to change to fit a mould that society tells me I should fit. Let’s face it.. your 20s suck. Well for me anyway. What a confusing time that was. (For anyone in their 20s nodding rapidly to those words hang in there, it gets better)
I don’t fit the ideals of society nor do I want to. You shouldn’t either. Also worth noting at no point in your life are you meant to have it all figured out. Don’t let society or yourself put that pressure on you.
There’s something truly beautiful about someone who is unapologetically themselves (unless you’re an asshole)
There seems to be a clear lag between my body and my mind and I still have “fat days” and anyone close to me can confirm I frequently ask for reassurance that I can or should wear an outfit. The good news is the confident person people perceive me as is well on her way. The world isn’t even ready for it 😂
As I always say, strive for progress not perfection. ✌🏼💁🏻♀️

Taco nights are my favorite! 😍 My plate has taco meat seasoned with @daksspices Taco Knight, salsa, guacamole, sour cream, cheese, jalapenos, lettuce and @questnutrition nacho cheese tortilla chips (4 net carbs per bag). I got the chips at Walmart but have also found them at GNC, Vitamin Shoppe and Amazon.

Sunday meal prep complete! One of my fav lunches since starting keto has been Cobb salads. So yummy! So, today I prepped four of them for the week. Also four snack boxes for the week 😊 Salads include lettuce, avocado, hard boiled egg, bacon, cheese and tomatoes. The little snack boxes are coconut/nut/chocolate mix 🥥🥜🍫 Can’t wait to dig into these throughout the week 😍
