Mediterranean tonight. Needed a change up since I’ve been eating a lot of bunless burgers.
Greek salad & mixed meats - grilled chicken, beef & gyro. I also got strained yogurt spread to dip my meats in...sooo good.
Delicious ugly food! Sliced kielbasa sausage doused with @ghughessugarfree delicious Bbq sauce and sprinkled with cut up @bestmaidpickles infused with sliced green onions. All rolled up in @missionfoodsus low carb flour tortillas (which are sooo good!). It was the post competition dinner that hit the spot perfectly 💖 #keto#ketodinner

Chicken club salad. Bacon, ham, egg, Swiss and cheddar, black olives, and cucumber. With ranch and a chili mayo. Also split a spring cocktail with the hubby. I cooked this for dinner and it was amazing! 😍
Keto Creamy Chicken Skillet with Broccoli and Cauliflower Rice.
3-4 chicken breasts
1 head of broccoli
1 head of cauliflower
1 small carton of Heavy Cream
4 tablespoons KerryGold butter
1/2 cup shredded mozzarella cheese
1/2 cup of shredded Parmesan cheese
Salt and pepper
Cut chicken breast into small cubes.Cook in a skillet until cooked throughout.
Cut cauliflower into chunks and place in a blender. Blend until resembling rice.
Remove chicken from skillet when done-set chicken aside.
Place Cauliflower rice in a skillet with 2 tablespoons of melted KerryGold butter.
Cook cauliflower rice until tender and slightly brown.
Boil/steam broccoli until done. When done, drain if boiled and smash with a fork.
In a hot skillet, melt 2 tablespoons KerryGold butter.
Add in the carton of heavy cream, and shredded cheeses.
Stir until hot and well blended making sure the cheese melts. It's done when it reaches a thick consistency.
In a cast-iron skillet add the cooked chicken, cauliflower rice, broccoli and cream sauce. (if you don't have a cast iron you can use a casserole Dish)
Bake in the oven for 15 minutes on 350.

INGREDIENTS (4 SERVINGS)
1 lb. ground chicken
5 garlic cloves, minced and divided
1 egg, beaten
1/2 c. grated Parmesan, plus more for garnish
2 tbsp. freshly chopped parsley
1/4 tsp. red pepper flakes
Freshly ground black pepper
2 tbsp. extra-virgin olive oil
4 tbsp. butter
Juice of 1/2 a lemon
1 lb. zoodles
1. In a large bowl mix together ground chicken, 2 garlic cloves, egg, parmesan, parsley, and red pepper flakes. Season with salt and pepper then form into tablespoon sized meatballs.
2. In a large skillet over medium heat, heat oil and cook meatballs until golden on all sides and cooked through, 10 minutes. Transfer to a plate and wipe out skillet with a paper towel.
3. Melt butter in skillet then add remaining 3 garlic cloves and cook until fragrant, 1 minute. Add zoodles to skillet and toss in garlic butter then squeeze in lemon juice.
4. Add meatballs back and heat just until warmed through. Garnish with Parmesan to serve.

So this is what happened last night ....Extra Cheesy Breadsticks ..... courtesy of @kaseytrenumblogger ... Oh, my ... these were ... the 💣💣💣! .
So easy to make .. and so delicious ... .
Recipe : 4 eggs, 1 oz cream cheese ( room temp ), salt, Italian seasoning, 1/4 tsp baking powder, 4 Tbsp butter ( melted and cooled off a little bit ), 1 1/2 cups mozzarella cheese , 1/2 cup Parmesan cheese, 1/4 cup coconut flour, garlic powder. Mix all in a bowl, pour in a greased ( don’t forget this step !! ) baking dish, top with more mozzarella and Parmesan cheese, and more Italian seasoning .... Bake at 400 for about 20 minutes ( that’s how long mine took, since I don’t have a working broiler - if you do, bake about 7 minutes, get them out, cut them with a pizza cutter, and bake for about 7 more minutes ...... and finish by placing them under the broiler for about 2 minutes ).... 👅So good ..... .
