My favorite way to tuna fish! Made with a mixture of mayo and @tessemaes honey poppyseed dressing, half an apple and a handful of raisins, on a bed of @organicgirl mixed green dressed with more Tessemae’s honey poppyseed dressing (really, is there any other way?!). Best eaten alongside @simplemills almond flour crackers and the other half of the apple.
Sunday morning breakfast after the gym. Changing my mindset about food as fuel and not a reward has been truly life changing, so I’m not going to say I earned this after getting through leg day at the gym after a week off (man, today was tough though), but just nutritious, comfort food to make Sunday the best day ever! A stack of @kodiakcakes buttermilk power cakes with mini chocolate chips and dark chocolate power cakes with peanut butter chips, layered with @siggisdairy vanilla & cinnamon yogurt and a swirl of @crazyrichardspb creamy peanut butter (and topped with more mini chocolate chips because I was feeling extra).
Our number 1, go-to comfort food: classic grilled cheese. Not my typical healthy fare of late, but for the last couple of days our household has fallen to a stomach bug. We haven’t eaten a vegetable (or anything really substantial for that matter) and have lived on toast and these grilled cheese sandwiches. I could stress about that or possibly force something else down, but sometimes wellness is listening to your body, nurturing it with something else in this moment. I know eventually I’ll be able to stomach green veggies again, but in the meantime, griddled sourdough bread and melty American cheese are keeping me afloat.
Tonight’s snack: organic strawberries from @wholefoods, dipped in a mixture of @siggisdairy vanilla yogurt and a spoonful of @eatingevolved chocolate spread. So freaking good, it tastes like a decadent chocolate mousse. And although the strawberries were good enough, they really have me looking forward to the upcoming local strawberry season!

Raw vegan desserts are my favourite type of dessert, and this Strawberry Pistachio pie by @medicalmedium is a winner! Eating desserts that fuel and nourish you and taste this good are like heaven on earth! The crust is made with pistachio nuts, dates, coconut, fresh basil and lemon zest. Filling is fresh berries with lemon and honey. No baking or cooking and all vitamins intact. Strawberries are packing with nutrients and goodness. Last night fending for myself so I thought I’d throw all of my husband’s least favorite things on one plate. Kidding! They’re really on my plate because they’re some of my most favorite things (that my husband prefers to avoid). Roasted salmon, @organicgirl mixed greens tossed with @tessemaes honey poppyseed dressing, petite tricolor carrots, and the recently instafamous cauliflower gnocchi from @traderjoes. First time making the gnocchi and I liked it, although I don’t think they really qualify as gnocchi, more like cauliflower tots.
Quick and easy breakfast after the gym this morning (emphasis on both quick and easy!). Mixed greens from @organicgirl, @usingers chicken apple sausages (best chicken sausage I’ve found with super clean ingredients and no added sugar!), @traderjoes petite tricolor carrots roasted during meal prep earlier this week, and topped with a quick sauce I whipped up from @tessemaes honey mustard, mayo, and a little coconut aminos (so much umami!)
Clubhouse turkey burger from @wholefoods topped with mustard and sautéed onions, @organicgirl mixed greens tossed with @tessemaes honey poppyseed dressing, and roasted sweet potato fries. My husband is traveling for work so I’m just cooking for myself this week. A few years ago I would’ve used that as an opportunity to eat what I wanted and gone through a drive-thru somewhere or made a big batch of Sloppy Joe’s and eaten them for 4 days straight (with nary a vegetable in sight)! Instead, I kept to my schedule and meal planned, grocery shopped, and meal prepped for the week anyway. Only, I didn’t have to worry if any of it was something my husband would eat! So I guess, in the end, you could say I still see this as a golden opportunity to eat as exactly what I want!
