Okay okay, ya gotta love a little ribbing. But these are not short ribs but a throw back Thursday pic on possible my best spare ribs I’ve ever made.
These ribs were described as “KCBS championship winning ribs.” Not only did they taste amazing, but just look at this glazing.
Total cook time was six hours, using Apple and cherry wood for my smoke. First three were unwrapped, then wrapped for two hour in brown sugar, honey and Parkay and then the last hour unwrapped and sauced.
The rub was homemade, the sauce was a bourbon BBQ sauce and the glaze cones courtesy of a little warm Apple jelly mixed into the BBQ sauce.
For the final finish, added a little peach wood at the end of the smoke to give it just the extra awesomeness for each bite.
Chopped or pulled? How do you like your smoked pork butt? I favor chopped but I won’t turn down pulled. What say you all? This was smoked on the @biggreenegg. Oh and that cleaver was the first knife I ever bought from @doghouseforge. I just couldn’t resist!
