I had every intention to post a completed picture of this delicious meal but my son and husband mowed it down so fast there was no time !
Port & Mushroom Short Ribs
4-6 short ribs I used @santacarotabeef
3 tablespoons oil
1 onion, diced
8-10 garlic cloves, chopped
1 pound cremini mushrooms or white button mushrooms (whole, wiped clean)
1/2 cup port wine
2 tablespoons Tamari, soy sauce or coconut aminos
2 tablespoons Worcestershire Sauce
1 teaspoon oregano
1 teaspoon ground pepper
1/2 teaspoon thyme - Set Instant Pot to Sauté and heat for 5 minutes. - Lightly salt short ribs on all sides. - Brown the short ribs on all sides. - Remove the ribs and add the onions, garlic and mushrooms. - Cook for 3 minutes. - Add the ribs back into pot along with remaining ingredients. - Press cancel - Press Pressure Cook - Set to 35 minutes. - Make sure pressure valve is set to Sealing
- Once cooking cycle is complete Press cancel and allow for pressure to naturally release (this means don’t touch it until the pressure has released on its own)
Enjoy nice and hot!

PALEO AND WHOLE30 INSTANT POT CHILI
1-2 tbsp. beef tallow (Optional: You only need this if your ground beef is lean.)
2 lbs. ground beef
1 large yellow onion, diced
4 tbsp. tomato paste
3 tbsp. chili powder (+ more if you like it spicy)
1 tbsp. garlic powder
1 tbsp. cumin
⅔ c. grass fed beef broth (or homemade)
28 oz. fire-roasted tomatoes, undrained
1 tsp. salt
½ tsp. pepper
cilantro or Italian parsley, for garnish (optional)

I wanted to share the absolute cheapest recipe you'll ever make in your Instant Pot...it can be as low as free if you do it the right way! I make vegetable broth in my pressure cooker by using scraps from vegetables I would have normally thrown away. Even if you choose to add a few spices, chances are you can make this for just a few cents. It's perfect to use in Whole 30, Paleo, Vegan, and Vegetarian recipes too! Zesty Homemade Vegetable Beef Soup

Calories: 353 kcal
1 tablespoon vegetable oil
1 pound beef stew meat cut into 1 inch pieces
1/4 teaspoon black pepper
1/2 teaspoon kosher salt
2 cloves garlic minced
16 ounce package frozen vegetables corn, green beans, carrots, etc.
16 ounce jar picante sauce
1 teaspoon dried basil
4 cups beef broth
15.5 ounce can great northern beans drained and rinsed

Instant Pot Macaroni and Cheese
Yield – 4-6 dinner servings
Preparation Time – 5 minutes
Cooking Time – 6 minutes in Instant Pot
1 lb. small shell pasta noodles
3 cups chicken stock or water, if vegetarian
1 Tbsp Dijon mustard
1/2 to 1 cup water
4 Tbsp butter
1 cup heavy cream
2 cups sharp cheddar cheese
2 cups shredded mild cheddar cheese
1 cup grated Parmesan cheese
Cracked pepper, as garnish
Side salad or veggies
Whisk together the chicken stock and Dijon mustard in the Instant Pot insert. Add the pasta noodles, then add water so that the pasta noodles are covered. Press the noodles into the liquid.
Set to Sealing.
Cook on Manual, High Pressure for 6 minutes.
Remove the insert from the base and stir the cooked pasta. There might be a little liquid remaining, but it will thicken up as it evaporates and as the cheese sauce is made.
Stir in the butter, until melted. Pour in the heavy cream and mix it well. Add the shredded cheeses and grated Parmesan cheese and gently stir it in and incorporate, until creamy cheese sauce forms.
Serve Instant Pot Macaroni and Cheese with cracked pepper on top and favorite veggies or salad.

My friend @deborahdrue made this for one of our potlucks and served it with biscuits/scones. So good and I immediately thought of making it for my most favorite lemon cake recipe. (I'll share THAT tomorrow!)

6 TBL/85 grams Unsalted Butter
1 cup/200 grams Sugar
2 large Eggs
2 large Egg Yolks
2/3 cup/150 grams Lemon Juice
1-2 tsp Lemon Zest grated
3 Half Pint Mason Jars
In the bowl of food processor (or with an Immersion Blender), mix the butter, sugar and zest for about 2 minutes, or until completely smooth. Slowly add the eggs and yolks and mix for just 1 minute. Add the lemon juice and mix to combine. The mixture will look curdled, but it will smooth out as it cooks. Divide Mixture into Mason jars and place the lids, turning until the lid catches, but not super tight. Place 1.5 cups of water in the Pressure Cooker and place a trivet inside. Place Mason jars on top of trivet. Lock on lid and close the Pressure Valve. Cook at High Pressure for 10 minutes. When Beep is heard, allow a 10 minute Natural Pressure Release. Remove jars from Pressure Cooker and carefully open to stir. Place lids on Curd and tighten just until the lid catches. Allow to cool for 25 minutes and then place in the refrigerator overnight. Curd will thicken as it cools.

This Instant Pot Split Pea Dal
2 Tablespoons vegetable oil
1 onion chopped
3 garlic cloves finely grated
1 2-inch piece ginger peeled and finely grated (about 2 tablespoons)
2 teaspoons ground coriander
1 teaspoon ground turmeric
1 teaspoon ground cumin
½ teaspoon cayenne more if you like your indian food spicy

2 tomatoes chopped
