This recipe was 100% vegan, and 100% delicious! Im so excited for soup season you guys! 😍 aaannnd I'm so grateful I was able to enjoy this amazing meal with my family tonight. Over the past few months, my husband and myself have been working opposite shifts to take care of our boys. I didn't realize how much I was taking the simple act of having dinner with my family for granite. - frozen broccoli and cauliflower florets, cooked on the stove in vegetable broth - sautéed chopped white onion, minced garlic and @traderjoes EBTB seasoning in @earthbalance vegan butter
- poured the veggies, broth and onions into a blender. Added nutritional yeast, salt n pepper before I blended it allllll up. Then added more to taste as I made it!

I FIGURED SINCE WE ARE NOW IN SEPTEMBER I NEED TO POST A SOUP RECIPE! I FOUND THIS ON PINTEREST A WHILE BACK AND THIS IS ONE OF MY FAVORITES! THIS SOUP IS NOT ONLY REALLY REALLY EASY….ITS INSANELY HEALTHY AND ITS ALSO VEGAN! AND EVEN IF YOU AREN’T VEGAN YOU WILL LOVE IT! THE SPICES ARE SO WARM AND COZY AND THE LENTILS HAVE SO MUCH NUTRITION! I LOVE SERVING THIS WITH A CRUSTY FRENCH BREAD ❤️ SPICY LENTIL SOUP!
INGREDIENTS * ¼ cup extra virgin olive oil
* 1 large yellow or white onion chopped
* 3 carrots peeled and chopped
* 4 garlic cloves chopped
* 3 teaspoons ground cumin
* 1 tablespoon curry powder
* 1 teaspoon dried thyme
* 1 tablespoon red pepper flakes
* 1 large can (28 ounces) diced tomatoes, drained
* 1 cup brown or green lentils, picked over and rinsed
* 4 cups vegetable broth
* 2 cups water
* 1 teaspoon salt, more to taste
* Freshly ground black pepper
* 1 cup chopped fresh collard greens or kale, tough ribs removed
* Juice of 1 medium lemon
Heat the olive oil in a pot on medium heat and then add the onion and carrot. Cook for 5 mins until onion is translucent. Add in the garlic, cumin, curry, thyme, red pepper flakes, and tomatoes and cook for 5 more minutes bringing all the flavors together. Add in the lentils, vegetable broth, and water and cook on low heat for 30 minutes or until the lentils are tender. Scoop out 2 cups of soup into a blender and blend (BE CAREFUL! PLEASE READ OR WATCH A VIDEO ON HOW TO PROPERLY DO THIS!!) . Add the mixture back into the soup. Then add salt, pepper, kale and lemon. Stir and cook for 5 more minutes. Taste and adjust any flavors you want to add more of!!(lemon, salt, pepper flakes etc). Serve with some delicious bread. Chicken Soup for the Soul, My Cold and My Breakfast 🍲
Clearly by this picture it's not Chicken Soup for Insta... when you're sick you don't care how your food looks 😐
I've been sick since the second half of our Paris trip ☹ So this simple chicken soup has been my daily breakfast. Simple is best due to lack of energy plus I just love simple meals.
Here's my super simple soup: beef bone broth + tons of ginger + tons of garlic + cardamom + anise + sea salt + chicken breast + bok choy + lime .... and eat for days and hopefully feel better 😊
