Let me tell you making an inventory of EVERYTHING in the fridge & two freezers has been incredible. Budget friendly meals using primarily the food we already had on hand.
Had on hand:
Organic Free Range Chicken Breasts
Little potatoes* .
*indicates #WIC .
Mixed together a small 4oz container of Feta Cheese + 1 package of cream cheese + 1/2 tablespoon of garlic + about 2 cups of fresh spinach (cooked first). Mix all together.
My chicken was already thin, but of needed make thin. Then add 1-2 spoon fulls on the mix above ⬆️⬆️ to the center of the chicken. Folded in half and pin closed with toothpicks.
Place in over at 450°F for 25mins (times may vary based on thickness of Chicken)

Lasagna made to impress the in laws 🌱 The tomato based sauce had red onion, garlic, red capsicum, carrot, zucchini, mushrooms, and brown lentils. I then made a super cheesy bechamel with @followyourheart mozzarella, and layered it up with spring onions and extra mozzarella on top. Big hit ✅ #vegan
For me it’s important that my food is beautiful and flavorful as well as nourishing. Meals are a time of celebration, a time to be grateful for what we do have. I’m on a limited”diet” at the moment... working out some sensitive gut issues but that doesn’t mean I’m giving up my love of and need for yummy meals. You can enjoy these chips in front of the Super Bowl or with some duck and Swiss chard. 🌿Roasted Butternut Squash Chips with Cilantro-Basil, Hemp Seed and Lemon Pesto: 🌿This recipe is
garlic and nut free so appropriate for CBO protocol. INGREDIENTS:
🌿2 pre-peeled butternut squash halves parchment paper
1 bu. organic cilantro
1 bu. basil
1/2 cup hemp seeds
1 lemon, juiced (or more if you like) 1/2 cup extra virgin olive oil, or more dash cumin
Pinch Himalayan sea salt DIRECTIONS:
🌿To make chips:
Preheat to 375^. Lay butternut squash half flat on cutting board. With a sharp knife cut 1/4’ thin half-moon pieces of squash. Arrange in one layer on a parchment paper-lined sheet tray. Once you have 2 sheet trays filled with slice space in oven for 20 minute. Remove from oven briefly and turn pieces over with a pair of tongs. Roast for 15-20 more minutes until crispy. 🌿To make Pesto:
Place clean herbs in Cuisinart and puree with at least 1/2 cup olive oil. Add hemp seeds, lemon juice, cumin and salt. Blend together in Cuisinart. Taste. Decide if you’d like it more lemony (add lemon), or more salty (add salt) or thicker (add hemp seeds) or more of a sauce consistency (add olive oil). 🌿To serve:
Place chips on platter and serve with dipping sauce. • • •
Everyone loves banana bread, and this chocolate version is one of my favorites! If your kids are like mine and enjoy eating only half of a banana, 🍌don’t worry! Just leave the rest in the peel, pop it in the freezer and then use it in a delicious recipe like this! 😋🍌🍫 ....or a fruit smoothie. But you know, balance 😆. CHOCOLATE BANANA BREAD
1/2 cup butter, one stick
1 cup sugar
2 eggs, large
1 teaspoon vanilla extract
1 1/2 cups flour, all purpose
1/2 cup cocoa powder
1 cup semi-sweet chocolate chips
1 teaspoon baking soda
1/4 teaspoon salt
3 bananas ripe
1/2 cup mini chocolate chips
Preheat oven to 350º F.
Cream butter and sugar together for 2-3 minutes until light and fluffy.
Add 2 eggs and cream together again for 1-2 more minutes.
Add the vanilla and ripe bananas, whole, to the bowl. Mix until combined and the bananas are mixed in.
Mix the semi-sweet chocolate chips into the dry ingredients. Add the mixture to the bowl and mix until just combined - do not overmix.
Pour into a greased loaf pan (see note) and sprinkle mini chocolate chips over the top.
Bake for 45-50 minutes, or until a toothpick comes out with a few crumbs on it.
I use a standard size loaf pan - 9 in x 5 in. If you have 2 smaller pans, that is also fine. Just adjust the baking time by about 15 minutes.
Mini chocolate chips are optional... Or are they??? 😂😉
So we usually have a fakeaway on a Friday but we’ve got family over tomorrow so doing them a massive feast then! We’ve had/got plans with family and friends every night this week and this is our only night not doing anything so we’re doing #dietfriendlydatenight !

🧡 Main - ROSEMARY, THYME AND LEMON CHICKEN PATTIES WITH CHEESY PARMESAN MASH - omg this was good!!! Syn Free using half of 1 hex a😋 Winter comfort food at its best! Simple and only a few ingredients too! I had some chicken thighs and just didn’t know what to cook so ended up with this... will DEFINITELY be making again! Will put a recipe on tomorrow when I have time if anyone would like it 😘
💛 Dessert - NUTELLA PIZZA - we shared this ‘pizza’ made from a weight watchers wrap, Nutella, strawberries, banana, and marshmallows which was grilled, then drizzled with @sweetfreedomuk choc shot 😍😍😍 half hex b + 4 syns each 🙌🏼

Easy tender oven-baked baby back pork ribs in a spicy gochujang-garlicky-soy sauce glaze.
In a small bowl, whisk together ⅓ cup gochujang, ½ tsp. each of garlic and ginger powder, and 2 Tbsp. each of brown sugar, soy sauce and rice vinegar. In a large baking dish, toss half of the marinade with about 3 lbs. of baby back ribs that have been separated. The other half of the marinade will be used for glazing later. Cover with foil and chill for a few hours or overnight. An hour before baking, take the dish out of the fridge.
Preheat oven to 350ºF, and bake ribs, covered with foil, for about an hour. A lot of juices will be released. No worries! Increase oven temperature to 425ºF, uncover ribs and continue to bake/roast for roughly another 40-45 minutes. During that time, every 10-15 minutes or so, turn the ribs using tongs, and spoon some of the juices in the baking dish over the ribs. In the last 5 minutes of baking, spoon/brush the reserved marinade over the ribs and continue roasting until they’re very browned and glaze-y. Carefully transfer ribs onto a serving vessel, sprinkle with sesame seeds and thinly sliced scallions. Serve with rice on the side.
