This is a homemade pasta salad that I made recently. It is so easy to make, and great for when you don't feel like a big meal. .

spaghetti alle vongole e sun golds | This is such a simple and easy dish and it’s always good. Here are the basics. Sweat half an onion in lots of olive oil until translucent and no color. Meanwhile, boil 1lb spaghetti in salted water until very al dente. Add crushed chili flakes and a few sliced garlic cloves to onions. Sizzle for 30 seconds. Add a glass of white wine and add 2lbs scrubbed littleneck clams. Cover for 3-5 min. Remove opened clams with tongs to a bowl. As soon as the clams open, they’re done. Drain pasta and reserve 1 cup pasta water. Add pasta to clam liquid along with 2 tablespoons butter and some pasta cooking liquid. Toss until pasta is cooked and has absorbed the the sauce. Add clams, chopped parley, halved sun gold tomatoes and juice/zest of a lemon. Taste for seasoning and balance with lemon and salt. Don’t forget to look for sustainable seafood with the @seafoodwatch app.
Over the last year I have done a TON of personal growth. It’s something I didn’t know I needed until I began. And now I can’t imagine where I’d be without it. But the absolute BEST part about my journey is how it’s shown up in my kids. Last year I started doing “I am...” statements with them. Not surprisingly, I got a lot of eye rolling and resistance. But because I know it’s good for them, I kept at it. I am so glad I did. In the last few weeks, something has clicked with this girl. She’s embraced affirmations and has been committed to her gratitude journal. Tonight, as I was leaving her room, she said: “Hey Mom, I think those cards are starting to rub off on me. Because now, when I make a mistake I think ‘it’s okay, because I can learn from this!’” 🤯🤯🤯
Mamas, don’t give up. Our kids are watching us. They WANT the guidance. It may not be in our time, but when we guide them (without controlling them) they will come around.
I will be forever grateful to my “little” (it’s really not so little) side gig that started me down this journey. If I hadn’t been open to that, who knows where this girl would be. Certainly not telling me how grateful she is for the fresh breeze blowing in through her windows tonight. ❤️

Want to turn something underrated into something delicious for tomorrow’s lunch? Here’s the cauliflower taco recipe @marcella.healthcoach shared for our #AGCollaborates partnership!
•2 corn tortillas
•1/2 cup of cauliflower
•1 teaspoon of avocado oil
•Himalayan salt to taste
•Salsa Verde (see below)
•1 cup of cilantro
•2 garlic cloves
•1 serrano / jalapeño chile
•1/2 cup of water
•1 tablespoon extra virgin olive oil
•1 teaspoon of Himalayan salt
Add everything to a food processor and you’re done!
•Finely chop the cauliflower and mix it with avocado oil, salt and pepper
•Cook on a skillet over medium-high heat
•Place a fraction of the stew over a corn tortilla and serve Salsa Verde over the dish

Pretty easy right. Oh wait there is a whole other part to the app that has recipes that are container friendly. Freaking awesome. It even includes delicious desserts too. Seriously there is zero deprivation.

The strawberry wastage is so sad at the moment in Australia. Buy strawberries (they’re sooo cheap at the mo) and if you’re scared of the needles, chop them up, toss them in some icing sugar to coat them and pour a good crumble mixture over them and VOILÀ! Strawberry crumble.
For the crumble mix equal parts oats, flour and brown sugar. Melt some vegan (or non-vegan) butter and mix until it’s ‘crumbly’/wet sand consistency.

I’m #tbt it today to this delightful Thai Cashew and Cabbage Quinoa Salad made with @gogoquinoa@earths_choice chickpeas, and @prairienaturals bone broth today because summer is quickly slipping into autumn and soon I’m going to be all about those soups, stews, and curries again🤤
In all seriousness though as much as I LOVE autumn (seriously my fav season....the eats, the colors, the sweaters, the boots) I am a bit sad to see the summer go (I mean summer berries, beach days, and sunrise hikes are divine).....but just like everything in life balance is 🔑. We cannot enjoy the beautiful fall without the contrast of a rainy spring. We can’t experience the sweltering heat of summer without the bone chilling cold of winter. The sunshine of the day would not exist without the blackness of the night.
That’s what life is.....it’s all about contrast, balance and a continuous cycle of it all. We see it in nature. We see it in ourselves. But learning to see the light even in the darkness is the biggest and most magical gift of all this.
I challenge you to take a look at your life, the life around you, and what’s within you today and see the darkness and the light within that darkness 💕

I put a FALL PUMPKIN twist on RGE (@rachaelsgoodeats) COOKIES and ummmmm ‼️‼️‼️‼️
3 tbsp maple syrup
I subbed the 1/4 cup coconut oil with 1/4 cup pumpkin
Recipe calls for 1/3 cup cashew butter but I filled the 1/3 cup half with tahini and half with almond butter
1 tsp vanilla
1 tbsp nut milk (I used my delicious oat milk I made last night)
1 cup almond flour
1/4 tsp baking soda
1/2 tsp cinnamon
Topped each cookie with sea salt and @eatingevolved chocolate chunks •
Then in the oven at 325 degrees for 12 minutes
You know you make these cookies too often when you can list the ingredients and measurements without looking at the recipe🤷♀️ but these were life changing!!!
Kids are all off to school and hubs and I are having a bit of a day date for a few hours before he has to come home and sleep for his shift tonight 😴 But first I want to share with you my latest craving....quesadillas 🤷🏻♀️ Not a bad thing to be craving, especially when it’s loaded with all my faves 🙌🏼 As many of you know my obsession with @sietefoods is real 💯 -
I used their tortillas, vegan cheese, and black beans seasoned with cumin, salt and pepper. Topped them with loads of 🥑, @sietefoods traditional and habanero hot sauces 🔥 Makes for one amazing mouthgasm 🤗
